Ingredients
Halloumi cheese: This is a semi-hard cheese with a high melting point, which means that it will keep its shape when you cook it. You can find it in most large supermarkets.
Tortilla wraps: Use corn or flour tortillas.
Cucumber, tomatoes and onion: My wrap veggies of choice! This is a great, classic combination with lovely flavors and textures, but you can substitute these with any vegetables that you like.
Spinach: I love adding leafy greens to my wraps, and spinach is one of my favorites. You can also use kale, lettuce or other leaves like arugula.
Tzatziki: This is my go-to sauce for Mediterranean wraps. I make my own Homemade Tzatziki Sauce, but you can also buy this in the store. Alternatively, use Avocado Lime Ranch Dressing, Yogurt Dill Sauce or Homemade Ranch.

One: Slice the halloumi cheese into ¼-inch thick pieces. Pan sear them on medium to high heat until they are golden on both sides.
Two: Warm your tortillas, either in an oven, microwave or frying pan or skillet. They are much easier to wrap when warm.
Three: Assemble the wraps by placing sliced halloumi, tzatziki and your vegetables in the middle of the wrap. Wrap them together by tucking in the sides, and tightly rolling the filling together.
Top tips
- Use any of your favorite vegetables, or whatever you have left in your fridge.
- If you don't want to cook the halloumi, you can simply make the wrap with cold cheese.
- Keep an eye on the halloumi cheese while it cooks, as it can char quickly.
- If you're not using a non-stick pan, you might want to add some olive oil to prevent the cheese from sticking to it.

I love to serve these for lunch or dinner. Halloumi wraps are perfect as a filling but simple meal in the summer, or a great vegetarian work lunch too.

Variations
Vegan or dairy free: I have yet to come across vegan halloumi, but I have seen vegan feta cheese in some supermarkets. For a vegan variation, you can simply crumble vegan feta, and use dairy free tzatziki.
Low carb and gluten free: Use low carb and gluten free wraps. There are so many fun options available in the store now, like spinach wraps.
Other vegetables: Use any veggies that you like! I think radishes, sliced pears, peppers, olives, canned artichoke hearts and sun dried tomatoes would be excellent alternatives.
Leftovers
The assembled wraps should stay fine for up to a day in a sealed container in a refrigerator. However, the sauce and the vegetables will make the tortilla soft and wet quickly.
If you want to prepare wraps for several days ahead, I recommend that you store the ingredients separately, and only assemble them immediately before serving. This will keep them fresh for as long as possible.
