    Air Fryer Zucchini & Corn Fritters

    These air fryer zucchini and corn fritters come together really easily for a quick and easy snack. They are perfect for your lunchbox, or to serve as a healthy treat.

    🥘 Ingredients

    These air fryer zucchini and corn fritters are made using fresh zucchinis, frozen or canned corn, grated cheese, eggs, flour and salt + pepper.

    🔪 Instructions

    Grate the zucchinis and add them to a mixing bowl with the other ingredients. Thaw frozen corn, or drain if using canned corn, before adding to the same bowl.

    Stir to combine the mixture. Preheat the air fryer to 200°C/390°F. Use a spoon to add blobs of the zucchini corn fritter mixture to the bottom of the air fryer. It can get a bit messy, so I recommend using air fryer parchment liners.

    Air fry the fritters for 8-10 minutes, or until the top side is golden brown. You might have to cook the fritters in multiple batches.

    Leave them to cool slightly on a cooling rack for a few minutes. This will help the insides of the fritters to set better. Serve them while they still are slightly warm, or at room temperature.

    🥗 Serving suggestions

    These fritters are super versatile. Serve them with your favorite dip like this healthy yogurt ranch dressing, or as a lean vegetarian main course with sides like roasted radishes, stewed kale and tomato and cucumber salad.

    🍲 Leftovers

    Leftover zucchini and corn fritters can be stored in an airtight container in the fridge for up to 4 days. They can also be frozen for quick and easy future snacks. Reheat the leftover fritters in a microwave or oven before serving.

    • 60 g grated cheese (cheddar or mozzarella)

      These are amazing! So 0delicious and WW friendly! I used Velveeta shreds and I made 10 fritters at 1 point a piece! Thank you for sharing this recipe, I will be making them again! (You were right, parchment paper is s must!)
