Ingredients
Tomatoes: Lovely vine-ripened tomatoes are my favorite, but you can use any tomatoes that you like, including cherry tomatoes, plum tomatoes, or Roma tomatoes.
Olive oil: Prevents the tomatoes from drying out while cooking. Use extra virgin olive oil if you want.
Seasoning: Salt, pepper, and oregano add fantastic flavor to the tomatoes.

- Wash your tomatoes and preheat the air fryer to 180 C or 360 F.
- Slice the tomatoes in half. Place them in an air fryer with the inside facing upwards, and rub oil and seasoning all over the surface.
- Air fry the tomatoes for 5-10 minutes, or until they are cooked to your liking. Check on them regularly to prevent them from getting burned.

Air fryer tomatoes are also a fantastic alternative to roasted tomatoes. I love using these as a base for a flavorful tomato soup, pasta sauce, or any other tomato-based dish. You can even add them to salads, casseroles, and pasta bakes.
Variations
Other herbs and spices: Use any herbs that you like, or whatever you have available. A herb blend, like Italian seasoning or mixed dried herbs, will work fine. Oregano, thyme, rosemary, dill, basil, mint, fennel, parsley, and sage are excellent options to try.
Spicy tomatoes: Add some spice with red pepper flakes, or even some cayenne pepper or chili powder.
Added sauces: Sriracha, mustard, vinegar, and garlic paste are all excellent choices. You can add these before or after cooking the tomatoes.
Make them cheesy: Sprinkle some shredded mozzarella or cheddar cheese, or crumble some feta cheese over the top of the tomatoes before you air fry them. Cheesy tomatoes are absolutely delicious, especially on toasted bread.
Equipment
To make this recipe, you will need an air fryer. Any air fryer should work well. Keep in mind that the size of the air fryer basket will determine how many tomatoes you can manage to cook at the same time.
Storage
Store any leftover roasted tomatoes in a sealed container in a fridge for up to 5 days. The tomatoes can also be frozen, but they will be quite soft after thawing, so frozen roasted tomatoes are best used as an ingredient in other dishes as opposed to serving them on their own.
