    If you like roast potatoes, you will love these Parmentier potatoes. Bite sized cubes of potatoes are roasted to crispy perfection, with a soft and fluffy middle. They are a great alternative to classic roasted potatoes, and are much faster to make!

    What are Parmentier potatoes?

    This dish is named after Antoine-Augustin Parmentier, a French pharmacist who's famous for promoting potatoes as an excellent food source. He even gave bouquets of potato flowers to the king and queen as a publicity stunt.

    Parmentier potatoes, or pommes Parmentier, are cubed potatoes fried until they are crispy on the outside, and soft and fluffy on the inside. They are similar to traditional British roast potatoes, only served and enjoyed in smaller pieces.

    Ingredients

    Potatoes: You can use any potatoes that you like. Starchy potatoes, such as Russets, Yukon golds and red potatoes are all excellent choices.

    Vegetable oil: Use any flavorless oil, such as vegetable oil or canola oil.

    Seasoning: We use salt and dried rosemary as a simple seasoning option. You can also try some other seasoning alternatives. See the variation section below for more suggestions.

    Instructions

    1. Wash and peel the potatoes, then dice them into bite sized chunks.
    2. Pour the vegetable oil into a baking sheet, and place it in the oven. Preheat the oven to 400 F / 200 C with the oil covered sheet in the oven. This allows the oil to heat up at the same time.
    3. Add the potatoes to a large pot with water. Bring the potatoes to a boil, and leave them to boil for about 2 minutes before draining off the excess water.
    4. Carefully take the baking sheet out of the oven. Transfer the potatoes to the baking sheet. Be careful, as the hot oil could splatter.
    5. Sprinkle salt over the potatoes, and place them in the oven. Bake for about 15 minutes.
    6. Take the potatoes out of the oven, and flip them over. Sprinkle rosemary or any other seasoning on top. Place them back into the oven, and bake for about 10-15 minutes, or until they are crispy on the outside and soft on the inside.
    7. Remove the potatoes from the oven, and drain off any excess oil. Serve immediately while the potatoes are warm.

    💡 TIP! Don't feel like peeling potatoes? You don't have to! Parmentier potatoes taste just as good if you leave the peels on. Just remember to wash the potatoes thoroughly.

    Top tips

    • Your potatoes could need more or less time than what's been suggested. To test if they are done, remove one potato cube from the oven, allow it to cool down a little, and do a taste test.
    • Use a clean paper towel to wipe off excess oil from the potatoes before you serve them.

    Serving suggestions

    Parmentier potatoes is an excellent side dish that pairs well with practically any entree. Here are some of my favorite options:

    • Roast Topside of Beef - Delicious roast beef with roasted potatoes are a traditional Sunday dinner option.
    • Air Fryer Steak - Serve the potatoes with a juicy steak.
    • Honey Glazed Roast Chicken - Roast chicken and potatoes are a classic.
    • Air Fryer Pork Roast - Crispy potatoes and crispy pork roast are a great pairing.
    • Baked Swordfish - Serve Parmentier potatoes with this tender swordfish for an easy dinner.
    • Pan Fried Hake - A healthier alternative to fish and chips.

    Variations

    Spicy: For spicy potatoes, season with some cayenne pepper, red pepper flakes or chili powder. You can also add other complimentary seasoning, such as garlic powder, cumin or turmeric.

    Mediterranean style: Add any dried herbs, such as parsley, dill, rosemary or oregano. You can also use Italian seasoning.

    Toppings: Garnish your roasted cubed potatoes with Parmesan, nutritional yeast, fresh herbs, Maple Vinaigrette or a flavorful sauce.

    Leftovers

    You can store leftover Parmentier potatoes in a sealed container in a refrigerator for up to 4 days. The potatoes will become less crispy after storage, but will still taste great.

    Reheat the potatoes in an air fryer, oven or microwave for a few minutes, and serve them warm. You can also use the roast potatoes in other dishes, for example a breakfast casserole like Pytt i Panna, or Potato Tacos.

    *Vegetable oil: You will have to use approximately ½ cup vegetable oil to roast Parmentier potatoes, however not all of this oil will be absorbed into the potatoes. By measuring the amount of oil before and after cooking, I calculated that approximately 3 tablespoons, had been absorbed into the potatoes while cooking. The nutritional calculations will take this into consideration, and will therefore be more accurate.
