    Buffalo chicken is a popular family favorite, and this delicious shredded buffalo chicken made in your pressure cooker is one of the most versatile versions of it.

    This is incredibly easy to make, and can be used in a variety of meals. Add the pressure cooker buffalo chicken to wraps, tacos, quesadillas, dinner rolls, or simply serve it as an entree.

    Ingredients

    Chicken: I like to use chicken breasts for this recipe, but you can use boneless skinless chicken thighs if you prefer.

    Buffalo sauce: I love Frank's RedHot Buffalo Sauce, but any buffalo sauce will do perfectly. You can also make your own homemade buffalo sauce. Alternatively, use a hot sauce and melted butter.

    One: Add the buffalo sauce to the bottom of your Instant Pot, and place the chicken breasts on top.

    Two: Seal the lid, and pressure cook for 12 minutes. Allow the pressure to release naturally for 5 minutes, then perform a quick release.

    Three: Use two forks to shred the chicken, and stir to coat the chicken pieces with the sauce.

    Top tips

    • Make sure to leave the buffalo sauce at the bottom of the Instant Pot, and place the chicken breasts on top. This is key to prevent the chicken from sticking to the bottom of the pot.
    • Be careful when you release the pressure from the Instant Pot, as hot steam will be released. I recommend using a utensil to turn the sealing valve.
    • Follow the manufacturer's instructions for how to perform a quick release of the steam.

    Serving suggestions

    Serve Instant Pot buffalo chicken as an entree for lunch or dinner. Here are some of my favorite side dishes to pair it with:

    Rice: Instant Pot Mexican Rice, Instant Pot Cilantro Lime Rice, Turmeric Rice

    Vegetables: Balsamic Caramelized Onions, Mexican Potatoes

    Salad: Black Bean Corn Salad, Asparagus Pasta Salad

    Variations

    Extra spicy buffalo chicken: Add chili powder, hot sauce or chili sauce to the buffalo chicken.

    With veggies: Add diced jalapenos, chilies, corn, or peppers to the pressure cooker. Cooking it with the chicken will add a little flavor, and make the dish more interesting.

    Other sauce: You can replace the buffalo sauce with any other hot sauce for a different flavor version. Great if you want a milder or spicier version.

    Leftovers

    Instant Pot buffalo chicken stores well in a refrigerator for up to 4 days. You can use the shredded chicken in multiple meals, either by adding it to various dishes, or by serving it with your favorite side dishes.

    I love to use this method to prepare a large batch of chicken with buffalo sauce. It's such a versatile cooking method, and perfect for meal prep!

    Frequently asked questions

    Why is my Instant Pot chicken rubbery?

    Rubbery or tough chicken breasts usually means that they have either been severely undercooked, or more commonly, that you need to cook it longer. Next time, try to leave the chicken to naturally release a little longer before you do a quick release.

    Can you stack chicken in the Instant Pot?

    Yes! You can absolutely stack chicken breasts in your pressure cooker, and this is a great way to cook a larger amount of chicken breasts.

    What is buffalo chicken?

    Buffalo chicken is simply chicken covered in buffalo sauce. Any cut of chicken can be cooked in buffalo sauce, and any cooking method works, from roasting to grilling to pressure cooking.
