    These sheet pan buffalo chicken quesadillas are super easy, absolutely delicious, and made in only 20 minutes!

    Quesadillas are absolutely amazing, but can be a bit frustrating to make if you're feeding a large family. That's where your sheet pan can completely change the game! Bake your quesadillas in the oven to save on time and effort.

    I absolutely love sheet pan meals. Just place the whole dinner on one baking sheet, pop it in the oven, and leave it until it's done. And even though we're saving time, we don't have to compromise on flavor!

    This cheesy buffalo chicken quesadillas tastes fantastic. You can make it mild or spicy, and serve it anyway you want. It's a guaranteed hit on the dinner table regardless!

    🥘 Ingredients

    To make the perfect sheet pan buffalo chicken quesadillas, you will need shredded chicken, buffalo sauce, cheese, tomatoes, tortillas, and cooking spray or your favorite oil in a spray bottle.

    You can use any leftover shredded chicken, or shred a rotisserie chicken. You can also make your own buffalo shredded chicken in your slow cooker!

    🔪 How to make sheet pan buffalo chicken quesadillas

    First, preheat the oven to 180 °C / 355 °F.

    Combine shredded chicken with buffalo sauce and finely diced tomatoes. Place a baking sheet on a 14" x 10" baking tray or sheet pan, and cover the bottom with tortillas.

    Sprinkle half of the cheese over the tortillas in an even layer. Cover with the buffalo shredded chicken, then the rest of the cheese. Finally, cover the top with another layer of tortillas.

    Spray or brush a thin layer of oil to the top of the tortillas. This helps them turn crispy and golden in the oven without drying out.

    Bake the quesadillas in the oven for about 15 minutes, or until the cheese is melted and the tortillas are crispy and golden on the edges.

    🐓 Buffalo chicken

    Buffalo chicken is made by combining chicken with buffalo sauce. You can buy buffalo sauce in most supermarkets (or here on Amazon!), or make it yourself by making a buttery hot sauce.

    You can find several recipes using buffalo chicken on the blog, like my popular buffalo chicken pasta bake, buffalo chicken tacos and buffalo chicken stuffed zucchini.

    In this recipe we use shredded chicken, hot sauce and cheese. The result is a cheesy delicious, slightly hot chicken dinner. You can adjust the amount of hot sauce to your preferences. Keep it light if you're making this dish for kids, and add a little extra if you like it spicy.

    Here are my best tips on how to make this dish:

    • These quesadillas are PERFECT to use up any leftover shredded chicken. I love to make this with my roast chicken leftovers.
    • You can add any extra ingredients that you like in your quesadillas. Try adding diced peppers, onions, black beans or riced cauliflower to change them up a bit.
    • Use any cheese that you like. I prefer to use a combination of Monterey Jack, cheddar and mozzarella. Buy a block of cheese and grate it yourself for the ultimate melted deliciousness.

    🥗 Serving buffalo chicken quesadillas

    Quesadillas are delicious, but even more delicious with side dishes!

    I love to serve them as a Tex Mex style buffet, with other delicious dishes like Mexican quinoa casserole and buffalo chicken tacos.

    You can also serve it as a main course for lunch or dinner with sides such as guacamole, cheesy sour cream sauce, or chili lime rice.

    🍲 Leftovers

    Here is how you can handle leftover buffalo chicken quesadillas:

    • Storing: Store the quesadillas in an airtight container in the fridge for up to 3 days. Transfer them to a plate, and reheat before serving.
    • Freezing: You can also totally freeze quesadillas! Transfer them to a freezer safe container, and freeze for up to 6 months. Thaw them in the fridge overnight, and reheat before serving.
    • Reheating: Quesadillas are best served warm! Reheat in a microwave or oven until they are heated through.
