These sheet pan buffalo chicken quesadillas are super easy, absolutely delicious, and made in only 20 minutes!

Quesadillas are absolutely amazing, but can be a bit frustrating to make if you're feeding a large family. That's where your sheet pan can completely change the game! Bake your quesadillas in the oven to save on time and effort.
I absolutely love sheet pan meals. Just place the whole dinner on one baking sheet, pop it in the oven, and leave it until it's done. And even though we're saving time, we don't have to compromise on flavor!
This cheesy buffalo chicken quesadillas tastes fantastic. You can make it mild or spicy, and serve it anyway you want. It's a guaranteed hit on the dinner table regardless!
🥘 Ingredients
To make the perfect sheet pan buffalo chicken quesadillas, you will need shredded chicken, buffalo sauce, cheese, tomatoes, tortillas, and cooking spray or your favorite oil in a spray bottle.
You can use any leftover shredded chicken, or shred a rotisserie chicken. You can also make your own buffalo shredded chicken in your slow cooker!
🔪 How to make sheet pan buffalo chicken quesadillas
First, preheat the oven to 180 °C / 355 °F.
Combine shredded chicken with buffalo sauce and finely diced tomatoes. Place a baking sheet on a 14" x 10" baking tray or sheet pan, and cover the bottom with tortillas.
Sprinkle half of the cheese over the tortillas in an even layer. Cover with the buffalo shredded chicken, then the rest of the cheese. Finally, cover the top with another layer of tortillas.
Spray or brush a thin layer of oil to the top of the tortillas. This helps them turn crispy and golden in the oven without drying out.
Bake the quesadillas in the oven for about 15 minutes, or until the cheese is melted and the tortillas are crispy and golden on the edges.

Buffalo chicken is made by combining chicken with buffalo sauce. You can buy buffalo sauce in most supermarkets (or here on Amazon!), or make it yourself by making a buttery hot sauce.
