Add chicken breast fillets to a ziploc bag along with finely chopped fresh cilantro, the juice from a lime and a pinch of salt and pepper. Leave it to marinate in the fridge for at least 30 minutes, or up to 12 hours.
Heat some vegetable oil, cooking spray or butter in a frying pan on medium heat. Pan fry the chicken fillets until they are golden on one side, then flip and cook on the other side. Leave it on medium heat until the chicken has cooked through completely.
