Ratatouille is a vegetable based dish originating from France, in the Nice area. It’s usually made as a one pot stew with a tomato based sauce and chunks of eggplant, zucchini, tomatoes and herbs. This dish is very versatile, and can be used either as a side dish, or as a light main course.
How to make slow cooker ratatouille
First, dice the vegetables in bite sized pieces or to your preference. Then, add them to the slow cooker along with the canned diced tomatoes and thyme.
Cook the ratatouille on high for 2-3 hours, or low for 4-6 hours. The vegetables will soften, and the ratatouille will be incredibly flavourful. Add seasoning to taste if you wish. Serve it directly while piping hot.
