    Lemon and Garlic Rice

    Try a new alternative to your plain old white rice with this lemon and garlic rice recipe. Perfect, fluffy rice with plenty of flavour is the best side and goes with anything!

    Ingredients

    • Lemon and garlic - the main flavour enhancers of your dish.
    • Rice - Use white or brown rice to suit your preference.
    • Vegetable stock, or water + a stock cube - adds more flavour to the rice.

    How to cook lemon and garlic rice

    Heat the oil in a small pot, and add finely minced garlic. Sute for a minute, then add dry rice and vegetable stock.

    Cook the rice on medium heat until all the water has absorbed. Depending on the type of rice you use, this should take 10-20 minutes.

    Add the juice from half a lemon to the cooked rice, and give it a stir. Allow the rice a minute to absorb the lemon juices, then serve it while still hot.

    Serving suggestions

    Serve lemon and garlic rice with your favourite protein mains. This dish is perfect with lemon chicken, honey mustard pork chops, lemon and caper sea bass, chicken and aubergine curry or slow cooker chicken adobo.

    You can also serve dish with any meal where you would typically serve rice. The combination of lemon and garlic is particularly nice paired with most meats and Mediterranean flavours.

    Here is how you can get perfect lemon and garlic rice every time:

    • Always cook rice on medium heat. If using a too high heat, more water will evaporate and it will not be cooked properly. You also risk burning the rice!
    • Use double the volume of water compared to rice. This is the perfect water to rice ratio.
    • Add seasoning to the rice before cooking. This way, the rice will absorb more flavour.
