    This is a savory and filling bacon dip. It's an excellent option to serve with snacks, as an appetizer or side dish.

    Ingredients

    For this recipe, you will need mayonnaise, bacon, lemon juice, garlic, salt and pepper.

    You can use any type of bacon, but I recommend the thin streaky bacon, as the crispy pieces will give the dip a great texture.

    💡 TIP! You can also make this recipe with turkey bacon, or even a vegetarian bacon substitute for leaner versions of the dip.

    Instructions

    Cook the bacon crispy using your favorite method. You can use this easy air fryer bacon recipe, cook it in a frying pan, in the oven or under the grill.

    Meanwhile, chop the garlic into very fine pieces. You can also use a small food processor, or grate the garlic.

    Leave the bacon to cool down for a few minutes, then chop it finely with a sharp knife. Add the bacon pieces to a bowl along with the other ingredients.

    Combine all the ingredients, and taste the dip. You can optionally add some more salt, pepper, lemon juice or garlic to taste. Serve the bacon aioli immediately, or store it in a refrigerator until it's ready to serve.

    Top tips

    Here is all my best advice to help you make the best bacon aioli:

    • Use a good quality mayonnaise. Your favorite brand will do fine, or you can make homemade mayo using your favorite recipe.
    • Leave the bacon to cool down for a few minutes before you chop it. It will crisp up nicely as it rests, and it's much easier to cut through.
    • Garlic is essential in any aioli, but you can omit it if you're not a fan.
    • The dip can split while it's resting in the refrigerator. If this happens, you can just simply give it a stir before serving it.

    Serving suggestions

    • Air fryer potato wedges - This dip is like made for wedges or chips!
    • Air fryer hamburgers - I love serving bacon aioli in burgers.
    • Oven baked sweet potato fries - The salty bacon and sweet potatoes are a perfect combination.
    • Air fryer carrots - These carrot chips also deserve a great dip.
    • Honey sriracha brussels sprouts - Spicy roasted brussels sprouts dipped in bacon and mayo? Sign me up!

    Variations

    Here are some easy variations of this recipe if you're looking to change things up:

    Vegetarian: Use a veggie friendly bacon substitute, or crispy pieces of smoked tofu.

    Leaner: Replace half of the mayonnaise with Greek yogurt for a leaner version of the dish.

    Spicy: Add some chopped jalapeno or chili, or a teaspoon or sriracha.

    Herbed: Add any chopped fresh herbs that you like. I recommend cilantro or parsley.

    Double garlic: Add an extra garlic clove, or a teaspoon of garlic paste.

    Leftovers

    You can store leftover aioli in an airtight container for up to 5 days. Give it a little stir before use.

    You can easily make this dip the day before you want to serve it, or make a big batch if you plan on serving it for several meals through the week.

    I do not recommend freezing the dip, as the mayo could separate and change its texture.
