These air fryer carrots are hands down the best carrots I have ever made. Raw carrots are seasoned and air fried, then topped with a sprinkle of parmesan and fresh herbs.

Air frying carrots is not only easy and convenient, but the result is absolutely incredible. I have found myself making these carrots when I need a quick side for lunch or dinner, or even just as a snack. That's how good they are!
This method is also amazing if you're planning a big family dinner with a large amount of side dishes. If you've ever organized Thanksgiving or Christmas dinner, you know what I'm talking about. This year you won't have to worry about having space on your stove top or in your oven to make your carrots - just throw them in the air fryer.
Air frying raw vegetables
If there was any doubt, yes, you can totally air fry raw vegetables! The result is very similar to oven roasted vegetables, with the benefit that you don't have to use your oven.
I always find that using my air fryer is faster compared to roasting carrots in the oven, as it preheats a lot faster. I like my roasted vegetables to be slightly crispy on the edges, but you can also use your air fryer to make really crispy vegetables, such as air fryer rutabaga fries.
Ingredients
You will naturally need raw carrots for this recipe. In addition, you will need olive oil, salt, pepper, paprika, garlic powder, parmesan and chopped fresh parsley.
Carrot size
I usually prefer to use regular carrots over baby carrots or chantenay carrots for roasting. Regular carrots have a stronger and less sweet flavor, which I think works much better.
I highly recommend slicing the carrots into similar sized sticks or batons, like thick fries. This can be done by quartering the carrots length wise. You can also buy chopped carrot batons in many supermarkets.
Instructions
Pre heat your air fryer to 355 °F / 180 °C. Depending on the make and model of your air fryer, it usually takes 3-5 minutes to heat up.
Peel your carrots, and chop them in half or quarters to form carrot batons or sticks the size of thick carrot fries.
Place the carrot sticks in a bowl, and add the olive oil, garlic powder, paprika, salt and pepper. Stir to coat the carrots evenly.
Add the carrots to your air fryer. To ensure that they cook evenly, you should place them in a single layer without too much overlap. If you're air frying a large amount, you might want to do it in multiple batches.
Air fry the carrots for 15-20 minutes, or until the carrots are soft enough to pierce with a fork while getting a slightly darker color on the edges. Shake the air fryer basket once or twice while they are frying.
Remove the carrots from the basket, and top them with shredded parmesan and finely chopped parsley.
Seasoning
I absolutely love the seasoning suggested in this recipe, but if you're looking for something different, I can recommend some other alternatives:
Honey glazed: Use ½ teaspoon salt, ½ teaspoon garlic powder and 1 tablespoon honey. This will create a sweet, sticky glaze. I recommend placing the carrots in a bowl in the air fryer to prevent the honey from dripping off the carrots while it's cooking.
Cinnamon sugar: Use 1 teaspoon sugar and ½ teaspoon cinnamon. These carrots will be very sweet. Again, I recommend placing the carrots in a bowl in the air fryer to prevent the honey from dripping off the carrots while it's cooking.
Herbs: Add ½ teaspoon salt, ½ teaspoon basil ½ teaspoon parsley and 1 teaspoon lemon juice. This version will be great with Mediterranean flavors.
Top tips
Here are my top tips to succeed with this recipe:
- Be careful not to overcrowd the air fryer basket, and remember to shake it occasionally. This will allow it to cook more evenly.
- Your air fryer might cook faster or slower than mine, so you might have to adjust the cooking time.
Serving suggestions
Carrots are a very common side dish, and you can serve this as a side for any meal, like miso glazed sea bass or honey mustard chicken breasts.
You can even serve them with your roast dinner, either as a side dish for your Sunday roast, or with your Christmas or Thanksgiving meal. The carrots are excellent served with air fryer whole chicken, honey glazed roast chicken, or slow cooker gammon in coke.
I also really like to serve them with a dip or sauce, such as yogurt dill sauce, or healthy homemade ranch dip.
Variations
In addition to the seasoning varieties above, here are some other suggestions for alternative ways to make these carrots:
Using other vegetables: You can also follow this method to roast parsnips, rutabaga, or sweet potatoes. You might have to slightly adjust the cooking time for other vegetables.
Vegan / dairy free: Omit the parmesan, or use a vegan parmesan alternative. The carrots will still taste great without it.
Leftovers
Leftover roasted carrots can be stored in an airtight container in a refrigerator for up to 3 days. Keep in mind that the leftover carrots tend to be less crispy and more soft, but they are still perfectly fine to eat!
Serve the carrots cold for example in a sandwich or wrap, or reheat them in a microwave for a few minutes, and serve as a side with your next meal.
