Since I discovered the wonder that is air fryer vegetables, I have air fried almost every vegetable thinkable (like air fryer broccoli or air fryer mushrooms). I have always preferred roast potatoes to boiled potatoes, but air fryer potatoes is honestly next level.
I now eat these at least once a week, especially during the summer when I don't particularly want the oven to warm up my entire kitchen. It's so fast, it's so easy, and the result is the best potatoes I've ever had in my entire life. Really!
Ingredients
To make this simple recipe, you will need potatoes, olive oil and your choice of seasoning.
I like to use a combination of salt, pepper, garlic powder and paprika, but you can use any flavors and seasoning that you like.
Instructions
Dice your potatoes into large bite sized chunks. If you're using small baby potatoes, you can serve them if you want.
Add the potatoes to a bowl, along with the seasoning and olive oil. Stir to coat the potatoes evenly.
Spray the inside of the air fryer basket with an oil spray to prevent the potatoes from sticking to it, then add the potatoes.
Air fry the potatoes for about 20 minutes at 390 °F / 200 °C. Shake the potatoes occasionally while they cook to ensure that they cook evenly. The potatoes are ready to eat when they are golden, and you can easily pierce through them with a fork.
Choosing potatoes
You can use your favorite potatoes in this recipe. Use the potatoes that you would normally use for roasting. I tend to use red potatoes, Yukon Gold potatoes or even baby potatoes.
Larger potatoes should be diced in chunks, but small baby potatoes can be air fried whole!
Top tips
Here are my top tips to make this recipe perfectly:
- Be careful not to overcrowd the air fryer basket, and remember to shake it occasionally. This will ensure that the potatoes cook evenly.
- Your air fryer might cook faster or slower than mine. The cooking time can therefore vary. Check that your potatoes are ready to eat by piercing them with a fork. You should be able to pierce through the potatoes with little resistance.
- Feel free to change the seasoning to suit your preferences.
Serving suggestions
Serve air fried potatoes with a tasty dip! Try ketchup, BBQ sauce, cottage cheese dip, healthy homemade ranch, or jalapeno artichoke dip.
I also like to serve them with a hearty main - such as steak, sausage meatballs, honey glazed roast chicken or chicken spedini.
Variations
You can do so many variations of these potatoes, depending on your personal preferences and what you want to serve them with. Here are some of my favorite alternatives:
- Make Mediterranean style potatoes with lemon juice and rosemary
- Sprinkle some parmesan over the cooked potatoes for a cheesy version
- Add chili powder for a spicy twist
- Add other root vegetables like carrots and parsnips cut into similar sized pieces - or check out this air fryer carrot recipe
Leftovers
Leftover air fried potatoes can be stored in a refrigerator for up to 3 days. Simply reheat them for 4-5 minutes in your air fryer, and serve them as a side dish for future meals.

Frequently asked questions
You can make almost anything that you would normally make in your oven. From roasted meat and vegetables to snacks, casseroles and desserts.
Potatoes are often soaked in water if you are making homemade fries. This helps to remove some starch, which gives them a nice texture and prevents them from sticking together. It's not necessary when frying larger chunks of potatoes.
