    Egg Fried Brown Rice

    Egg fried brown rice is an easy main or side dish. Leftover brown rice is stir fried with vegetables and eggs to create healthy, filling street food.

    Fried rice is popular in several Asian regions, and can often be found in restaurant and take away places in the rest of the world. This version used brown rice, which is more filling and rich in fiber.

    🥘 Ingredients

    To make egg fried brown rice you will need cooked brown rice, mixed vegetables and or meat (pick your favorites!), eggs, sesame oil and soy sauce.

    You can also add any other stir fry sauces if you wish. Feel free to use whichever vegetables and meat you have available, either frozen or fresh. I often use a frozen vegetable mix, which works great!

    🔪 Instructions

    You will need cooked leftover brown rice for this recipe. If you don't have any leftover rice, boil brown rice according to the package instructions, then leave it to cool down and rest for at least a few hours or ideally overnight. This helps the rice dry out, making it perfect for fried rice.

    Heat up the sesame oil in a large skillet or wok. Add the cooked rice, and stir fry for a few minutes. If you want the fried rice to be crispy, you can cook it for longer until it has the consistency you like.

    Move the rice to the edges of the wok, and create an open area in the middle. Crack the eggs in.

    Stir to scramble the eggs, then mix in the rice little by little until it's all combined.

    Add diced vegetables and cooked meat. Stir fry for a few minutes until all the ingredients have warmed through.

    Add the soy sauce, give it a stir then serve.

    Here are my best tips for making perfect egg fried brown rice:

    • If you like crispy fried rice, leave the rice to cook in oil for longer before adding the vegetables.
    • Fried rice is usually better using leftover rice that has rested for at least a few hours before cooking. This is the perfect recipe to use up what's left from yesterday's dinner!

    Egg fried rice can be served as is, or paired with other dishes as a main or side dish.

    Try serving it with garlic green beans, ginger and spring onion chicken, in tofu bowls, or with sesame chicken.

    🍲 Leftovers

    Leftover egg fried brown rice with vegetables can be stored in the fridge for up to 3 days. You can also freeze it for up to 3 months.

    Reheat the leftovers on the stovetop or in the microwave, and serve them warm.
