How to make crustless quiche with broccoli and cheese
Preheat your oven to 180°C / 160°C fan oven / 355°F.
Finely chop the red onion, and cut the broccoli into small, bite sized florets. Spray a frying pan with one calorie cooking spray, and add saute the onion and broccoli until the onion has softened and the broccoli is cooked halfway through, about 5-6 minutes.
Combine eggs, green yogurt, nutmeg, salt and pepper in a small bowl. Whisk until it's a combined and fluffy mixture. Add shredded cheddar cheese.
Spray a quiche tin with some one calorie cooking spray, and add the sauteed broccoli and red onions. Pour over the egg and cheese mixture, and use a spatula or spoon to distribute it evenly. Cook the crustless broccoli quiche in the oven for about 30-45 minutes, or until the eggs are set and the top of the quiche is slightly golden.

Can you use frozen broccoli for this recipe? I definitely prefer this quiche with fresh broccoli, but you can use the frozen version in a pinch. Make sure to thaw it thoroughly, then drain off as much water as possible before use.
How long does leftovers last? Leftover broccoli quiche will last about 4 days in an airtight container in the fridge.
