Crustless quiche with broccoli and cheddar

- 1 broccoli
- 1 red onion
- 4 tablespoon greek yogurt
- 7 eggs
- 100 g cheddar
- ½ teaspoon salt
- ¼ teaspoon pepper
- ⅛ teaspoon nutmeg

Preheat your oven to 180°C / 160°C fan oven / 355°F.
Finely chop the red onion, and cut the broccoli into small, bite sized florets. Spray a frying pan with [amazon text=one calorie cooking spray&asin=B06XGND554], and add saute the onion and broccoli until the onion has softened and the broccoli is cooked halfway through, about 5-6 minutes.
Combine eggs, green yogurt, nutmeg, salt and pepper in a small bowl. Whisk until it's a combined and fluffy mixture. Add shredded cheddar cheese.
Spray a quiche tin with some [amazon text=one calorie cooking spray&asin=B06XGND554], and add the sauteed broccoli and red onions. Pour over the egg and cheese mixture, and use a spatula or spoon to distribute it evenly.
Cook the crustless broccoli quiche in the oven for about 30-45 minutes, or until the eggs are set and the top of the quiche is slightly golden.
*you can also use vegetable oil, although this will add more calories.
Can you freeze broccoli quiche? Yes! This freezes well in an airtight container for up to 3 months. Thaw frozen quiche in the fridge overnight, then reheat it in the microwave or serve it cold.
Can you use other cheeses? I love broccoli and cheddar, but you can use other cheeses as well. Mozzarella would be a great alternative. For a more grown up taste, try adding some stilton and parmesan to the mixture.
Can you use frozen broccoli for this recipe? I definitely prefer this quiche with fresh broccoli, but you can use the frozen version in a pinch. Make sure to thaw it thoroughly, then drain off as much water as possible before use.
How long does leftovers last? Leftover broccoli quiche will last about 4 days in an airtight container in the fridge.
