    Broccoli Sausage Casserole

    The easy broccoli sausage casserole with eggs and cheese is my go-to breakfast casserole. It's easy to make, stores really well, and the idea of having broccoli for breakfast always gets me excited!

    🥘 Ingredients

    This broccoli and sausage casserole requires raw sausage (either without casings, or sausages you can remove the casings from), broccoli, eggs, onion, garlic, and cheese.

    You might also want to add any seasoning. This casserole is perfect for using up any leftovers, so feel free to add any leftover cooked meat or vegetables.

    🔪 Instructions

    Start by preheating your oven. Finely dice garlic and onion, then add them to a frying pan along with 1 teaspoon olive oil. Allow them to saute for 4-5 minutes until the onion is soft and translucent.

    Remove the casings from your sausages, and add them to the pan. Use a fork, spoon or spatula to mash and chop the sausages until they turn into ground sausage consistency.

    When the sausage has cooked through, add it to a casserole dish along with small broccoli florets.

    Crack the eggs into a small bowl, and whisk them together until a smooth consistency. You can optionally add some seasoning to the eggs, then pour them over the sausage and broccoli.

    Use the back of a spoon or spatula to gently press the sausage and broccoli down into the casserole, and cover with grated cheese.

    Bake the casserole in the oven until the eggs have set and the cheese melted, about 25 minutes.

    💭 Top tips

    Here are my best tips to get this recipe perfect:

    • You can add some seasoning to the eggs if you wish. I add a pinch of salt and pepper, but you can definitely experiment with adding some herbs or spices.
    • You can omit the cheese for a lighter, dairy free version of the casserole.
    • Try adding extra ingredients to this egg breakfast casserole to suit your family's preference. Peppers, ham, bacon, shredded chicken, tomatoes, mushrooms or cauliflower would be great additions.

    🥗 Serving suggestions

    This egg casserole is great to serve for breakfast, lunch or brunch. I also like to add it as a part of a summertime picnic, buffet or potluck.

    You can also serve broccoli and sausage casserole as a light dinner. Try serving it with a vegetable side or a salad, like couscous salad, ratatouille, green beans or Greek pasta salad.

    🍲 Leftovers

    You can store leftover breakfast egg casserole in an airtight container in the fridge for up to 4 days. Serve the leftovers cold, or reheat them in the microwave.

    You can also freeze leftovers for up to 3 months. This is a great make ahead breakfast, as it can easily be thawed and reheated when needed.

    Ingredients
      

    • 400 g sausage use low fat or chicken sausage for reduced calories
    • 1 broccoli
    • 5 eggs
    • 1 onion
    • 1 garlic clove
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 100 g grated cheese
    • 2 teaspoon olive oil

    • Start by preheating your oven to 210°C / 200°C fan oven / 410°F.
    • Finely dice garlic and onion, then add them to a frying pan along with 1 teaspoon olive oil. Allow them to saute for 4-5 minutes until the onion is soft and translucent.

      I made this and it was great. I used half spicy italian sausage and half andouille, because it is what I had, and browned it at a fairly high temp to try to get some crispiness. I added sauerkraut (with the broccoli) to use it up; it went well with the sausage. I think the recipe lends itself to using whatever you have around in it. Also, you could dice a slice or two of bread and mix with the eggs for an egg strata effect. All in all, it was great and I will make it and variations of it again.
