These air fryer zucchini chips are a tasty snack or side dish you can make in only a few minutes. Sliced zucchini coins are coated in breadcrumbs and air fried to crispy perfection!

Since buying my air fryer, I've become obsessed with coating stuff in breadcrumbs, and air frying it. It's just so GOOD! If you're on the same page, you might want to check out my air fryer breaded chicken, air fryer jalapeno slices, air fryer halloumi fries or air fryer pickles.
And honestly, this recipe couldn't be easier. Slice the zucchinis, coat them, and pop them in an air fryer for a few minutes. It's perfect as a late night treat when you feel like something savory, or as an alternative to french fries.

Air fryers are perfect for making quick, easy and healthy snacks. They use air circulation to fry food, and no oil is required. The result is crispy food without the grease and with much fewer calories than traditional fried food.
🥘 Ingredients
This 4 ingredient zucchini chip recipe only requires zucchini, egg, flour and breadcrumbs.
You will also need an air fryer. I use an air fryer like this which you can get on Amazon!
🥒 Zucchini
I use regular sized zucchinis of the type you can buy in British supermarkets. They are about the same width as a banana, which means that you can slice them into bite sized coins.
If you are using large homegrown zucchinis, you might want to rather cut the zucchini into strips or smaller chunks, as slicing them into rounds might make each slice too large.
You can also use yellow zucchinis for this recipe! Yellow zucchinis taste very similar to the green variety, and will have the same texture when air fried.
🔪 How to make air fryer zucchini chips
First, slice the zucchini into ¼ inch or ½ cm thick slices. Prepare three small bowls: one with the flour, a second with the breadcrumbs, and a third bowl with the egg. Whisk the egg until it's light and frothy.
One by one, add the zucchini slices to the flour, then the egg, then the breadcrumbs. Make sure to coat each slice with each of the 3 layers. After dunking in the eggs, I suggest you shake off excess eggs before you coat the zucchini slices with the breadcrumbs.
Preheat the air fryer to 355°F / 180°C. Spray the air fryer with cooking spray or oil in a spray bottle to prevent the zucchini from sticking to it.
Place the zucchini chips in the air fryer in one single layer, with a small space between each one. This will ensure even cooking of each chip. Air fry for 4 minutes, then flip and air fry for another 4 minutes on the other side.
Serve the zucchini chips immediately.

- Add any spices or seasoning to the bowl with the flour if you want. Try adding some chili, ranch seasoning mix, salt and pepper or smoked paprika for a flavor variety.
- Coating each zucchini slice thoroughly with the flour, then the egg and then the breadcrumbs is crucial to achieve the perfect crispy exterior.
- Keep an eye on the air fryer, as your zucchini chips can cook faster than the time suggested.

🍲 Leftover zucchini chips
Breaded zucchini chips taste way better when they are enjoyed immediately after making them. You can serve them a few hours after making them, however they won't be as nice as when they are served warm.
Any leftovers can be stored in the fridge overnight. I do not recommend freezing zucchini chips, as their texture will be very unappetizing after defrosting.
