Zucchini noodles with shrimp is an easy and quick dinner recipe. We cook the shrimp and noodles in the same pan, making washing up a lot easier. This recipe is flavourful and low carb, making it a great weeknight dinner choice.

How to make zucchini noodles
Many large supermarkets carry zucchini noodles, but you can also make your own. All you need is a handy spiralizer.
Both types of spiralizer work the same way; simply twist the zucchini pushed against the blades, and noodles will appear on the other end.
How to cook zucchini noodles with shrimp
You can use premade zucchini noodles for this recipe, or make your own using a spiralizer. I estimate about 1 medium zucchini per person for this recipe.
Heat some olive oil in a pan, then add the shrimp. Drizzle cajun seasoning over the shrimp, and stir to coat them evenly. Allow the shrimp to cook for about 2 minutes, then push them to one half of the pan. On the other half, add the zucchini noodles. Allow them to cook until they have warmed up, about 2 minutes, then serve the noodles topped with the shrimp Both the zucchini and the shrimp cooks really fast. Over cooking the shrimp will make them dry and chewy, and the zucchini turns to mush if left in the pan for too long. Cooking zucchini noodles with shrimp only takes 5 minutes in total.

We use cajun seasoning for this recipe. Cajun shrimp is really delicious, and the flavours suit this dish nicely. If you want to change it up, or you're not a fan of cajun seasoning, you can make zucchini noodles with shrimp using these alternatives:
- Garlic and lemon: Saute a finely minced garlic before adding the shrimp, and squeeze the juice of half a lemon on top.
- Garlic butter: Replace the olive oil with 1 tablespoon butter, and saute a finely minced garlic clove before adding the shrimp.
- Spicy shrimp: Replace the cajun seasoning with cayenne pepper.
- Salt and pepper shrimp: Use freshly ground pepper and sea salt.
Leftovers
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat leftovers in the microwave until piping hot throughout.

- 2 zucchinis UK: courgettes, alternatively 300 g zucchini noodles
