Start your day right with a smashed egg on toast. An incredibly easy dish that's made in only a few minutes, but it tastes great and keeps you energized for hours.

Ingredients
For this recipe you will need an egg, a slice of bread, and optionally some butter or another spread. You can also add some finely chopped herbs such as dill, chives or parsley if you want.
You can also add any other toppings to your toast, such as avocado, smoked salmon or tomatoes. See more topping options below!
Instructions
The key part to this recipe is boiling the eggs perfectly. Fill a pot with water, and bring it to a boil. Meanwhile, remove the egg from your refrigerator and leave it next to the pot to allow it to warm up to room temperature.
When the water is boiling, add the eggs. The cooking time will vary depending on the size of the eggs, and whether you prefer soft boiled or hard boiled eggs. I recommend setting a timer to keep track of the time.
Here are the cooking times, counted from the moment you add the egg to boiling water:
- Soft boiled egg: 4 minutes
- Semi soft boiled egg: 5 minutes
- Semi hard boiled egg: 7 minutes
- Hard boiled egg: 8 minutes
After the egg is boiled, remove the shells, and toast your sliced bread. Place the egg on the bread, and use a knife or fork to smash up the egg and spreading it across.
Serve the smashed egg on toast immediately while it's still warm.
Top tips
- Be careful not to overcook your eggs. I recommend using an egg cooker, as they ensure a perfect result every time.
- You can of course serve the smashed egg on other dishes, not just toast. Try serving them on other types of bread, over fried rice, or in salads.
Serving suggestions
Serve smashed egg on toast for breakfast, brunch or as a snack between meals. It's a simple, but filling dish, and doesn't require any sides.
If you still prefer to pair it with a side dish, I recommend mozzarella stuffed mushrooms, sliced tomatoes and cucumbers, and a lovely drink such as coffee, tea, or mint iced tea.
Variations
Try any of these excellent variations if you're looking to change up the dish:
- Add some air fryer bacon, smoked salmon, chorizo, tomatoes or avocado to the toasts for a more filling and flavorful meal.
- You can also top the eggs with sauces or seasoning, such as sriracha, ketchup, ground black pepper, red chili flakes or freshly chopped dill.
- Use a spread on the bread, such as cream cheese, butter, or yogurt dill sauce.
Leftovers
If you have any leftovers, I suggest storing the eggs separately, and adding them to freshly toasted bread when you are ready for your next meal.
If the smashed eggs are stored on top of toasts, the bread will eventually go soggy. I would recommend storing this dish in a refrigerator only for up to a day.
The eggs can naturally also be used in other dishes, such as egg curry or salads.
