I love a easy and healthy side dish, and this is one of my favorite ways to prepare mushrooms. Although we often serve it as a side, stuffed mushrooms are also great as an appetizer, especially if it's served with a nice tomato based sauce.

One of my favorite ways to enjoy mushrooms with mozzarella is to serve it at a summer BBQ. Mushrooms taste great paired with smoky, crispy meat.

    🥘 Ingredients

To make this recipe, you will need fresh mushrooms, mozzarella cheese, fresh basil (or other herb), as well as salt and pepper for seasoning.

Additionally, you can add any seasoning you like, or vegetables such as diced tomatoes, spinach or broccoli.

    🔪 Instructions

Combine the oil, salt and pepper in a bowl, and remove the stems from the mushrooms. Preheat the oven to 200°C / 395°F.

Brush the oil and seasoning all over the surface of the mushrooms.

Add roughly chopped basil and sliced, diced or grated mozzarella cheese to the indent where the mushroom stems were.

Place the stuffed mushrooms on a baking sheet covered baking tray, and bake them in the oven until the cheese has melted, about 10 minutes.

    🍄 Mushrooms

You can make this recipe with any fillable mushrooms. I prefer to use white mushrooms, button mushrooms or chestnut mushrooms as they are smaller and more suitable as a side dish.

You can also use portobello mushrooms, which are typically larger mushrooms, and serve them as a vegetarian entree.

    💭 Top tips

Here's my best advice to get these mozzarella stuffed mushrooms perfect:

    • If possible, use fresh whole mozzarella instead of pre-grated mozzarella. It melts better and tastes great!
    • Althought the fresh basil can be omitted, I highly recommend adding some fresh herbs, as they give the mushrooms a lot of flavor.
    • The fresh herbs should be added underneath the cheese to prevent them from getting burned in the oven.

🥗 How to serve mozzarella stuffed mushrooms

You can serve these as a healthy and easy snack, or as a side dish with roasted chicken, honey mustard pork chops, or chicken marsala.

    🍲 Leftovers

Store leftover cheese stuffed mushrooms in the fridge for up to 3 days, and reheat them before serving.

You can also reuse the leftovers in other dishes. Try dicing them and adding them to a mushroom bolognese, or shepherd's pie.
