    Spicy Roasted Carrots

    Serve up these spicy roasted carrots as a healthy side dish for your next dinner. They taste so much better than steamed or boiled carrots, and are just as easy to prepare.

    The carrots are coated with seasoning and roasted to perfection in the oven. It's a delicious dish that makes a nice change from your typical vegetable dishes.

    Carrots are commonly served as a side dish, but they are typically served steamed or boiled without any seasoning on them. This recipe gives the bland carrots a burst of flavor, making them much more enjoyable.

    Spicy roasted carrots are really easy to adapt to suit your preferences. You can make them really spicy, really mild or something in between.

    Ingredients

    This recipe requires raw carrots, along with assorted spices. We use cumin, paprika powder, salt, pepper, chili powder, coriander, and cinnamon. Any of these spices can be omitted or substituted with other seasoning you have available.

    💡 TIP! Don't have all the spices available? Use an Indian, Moroccan or Mexican seasoning packet instead.

    Add chili powder to taste. If you want the carrots to be spicy, you can add up to ½ teaspoon chili powder. However, if you don't want any heat, you can omit the chili completely.

    Instructions

    1. Preheat the oven to 200°C / 400°F.
    2. Peel the carrots, and place them in a mixing bowl. Drizzle over the olive oil and seasoning, and coat the carrots evenly.
    3. Place the carrots on a baking tray in the oven, and bake the carrots until they are soft enough to pierce with a fork and slightly browned, about 25-30 minutes.

    Top tips

    Here is my best advice to get this recipe perfect:

    • Make sure to keep the carrot pieces equally thick. This will help them bake evenly.
    • You can adjust the seasoning to suit your family's preferences. Be careful with the chili powder if you're worried about using too much spice.
    • The oil will keep the carrots from drying out during the roasting process. If you want to avoid using oil, you can use melted butter or cooking spray instead.

    Serving suggestions

    Serve the carrots as a side dish with your favorite entree. I think these carrots go well with essentially anything, but here are some of my top ideas:

    • Air Fryer Whole Chicken - A whole roast chicken with crispy skin cooked in the air fryer.
    • Pesto Baked Salmon - Simple pesto baked salmon pairs really well with roasted carrots.
    • Slow Cooker Apricot Chicken - This flavorful chicken is one of my personal favorites.
    • Air Fryer Meatloaf - Carrots are a given side dish to serve with meatloaf.
    • Pan Seared Pork Loin Steaks - You simply can't go wrong with carrots and boneless pork chops!

    Variations

    Spicy: Add extra chili powder to bring some heat to the carrots.

    Mild: Omit the chili powder to make mild, flavorful carrots. I typicall make this version when I'm cooking for kids.

    Taco carrots: Substitute the seasoning when taco seasoning mix for taco flavored carrots. A quick, but tasty version that goes really well with Mexican or Tex Mex dishes.

    Leftovers

    Leftover spicy roasted carrots can be stored in the fridge for up to 4 days. I love to batch cool a large amount of these, and enjoy them as a side dish through the week.

    You can also dice the leftover vegetables and use them in other dishes, such as casseroles, curries or stews. This is such a great way to use up any leftovers, and the carrots add lovely flavor and colors to any dish.

    Is this suitable for my diet?

    Roasted carrots is a lean side that's great for most diets including slimming world, weight watchers, paleo and whole 30. It is also vegan!

    Can you roast whole carrots?

    Absolutely. Whole carrots can be roasted at 400 F / 200 C until soft.
