    These ham, egg and cheese rollups are perfect to serve as an afternoon snack, as a lunchbox treat, or as a quick and easy breakfast option.

    Ham rollups are great fingerfood. These are stuffed with cheesy scrambled eggs, and they only take 5 minutes to make. It's a lean, low carb snack that works great as an alternative to the after school sandwich.

    🥘 Ingredients

    All you need is ham slices, eggs and cheese. You can also add some chives or dill if you want to be fancy, but I typically only season it with salt and pepper.

    You can use regular ham, turkey or chicken ham, or even vegetarian ham slices. In fact, this recipe works great with any sliced meat or meat alternative.

    🔪 Instructions

    Heat up some cooking spray or vegetable oil in a frying pan. Add the eggs, and scramble them with a spatula. When you have reached the desired scramble consistency, add grated cheese, and stir until the cheese has melted.

    Split the cheesy egg scramble between the ham slices, and roll them up. Then, serve immediately or store them in the fridge until you are ready to eat.
