Start your morning right with a classic chilli cheese toast. Delicious toasted bread with melted cheese, bell peppers and chilli is a fantastic upgrade from the classic cheese on toast.

Ingredients
For this recipe, you will need a few slices of your favorite bread, your favorite meltable cheese such as cheddar or mozzarella, bell peppers and fresh chilli.
You can use any bread or cheese, but my favorite is wholewheat, seeded bread, with melted cheddar or Monterey Jack on top.
Instructions
Preheat the oven to 390 °F / 200 °C / 190 °C fan oven.
Place the sliced bread on a baking sheet covered baking sheet, and top with shredded or sliced cheese. Add finely diced peppers and chilli, and bake the toasts in the oven for 5-10 minutes, or until the cheese has melted and the peppers are slightly golden.
Optionally, you can top the toasts with any fresh herbs, or sauces such as cheesy sour cream sauce, ketchup or sriracha before serving.
Top tips
Here are all my best advice on how you can succeed with this recipe:
- Due to differences in ovens, your toasts might cook faster or slower than mine. Keep an eye on them so they don't burn!
- You can use any color peppers you like - although a variety of colors make the toasts look nicer.
Serving suggestions
Chilli cheese toast is often served as a quick and easy meal for breakfast, lunch or dinner, usually accompanied by a cup of tea or coffee.
However, you can also serve it with a stew or soup, instead of a cheese sandwich. Try serving it with tomato soup, slow cooker chicken taco soup, or spicy red lentil soup.
Variations
Looking for a change? Here are some of my favorite alternative ways to make these amazing toasts:
- Use a vegan cheese alternative for a vegan and dairy free cheese on toast version.
- You can also use other types of bread, such as bagels, croissants or ciabattas.
- Try adding a sauce under the cheese, like salsa or sriracha.
- Serve the toasts with some guacamole on top for a milder version.
- You can omit or adjust the amount of chilli you use if you want to make this dish for kids.
Leftovers
Leftover cheesy toast can be stored in an airtight container in a refrigerator for up to 3 days. Keep in mind that the texture of toast tend to change, and the dish might not be as appetizing the next day.
I highly recommend reheating the leftover cheesy toasts in your oven, air fryer or under the grill before serving. This will make them warm, melt the cheese, and make the bread crispy.
Frequently asked questions
Yes, but only if the toppings are heavy. Light weight toppings like cheese might end up flying off the bread due to the air circulation!
You can add absolutely anything to cheesy toast. Diced veggies, ham, shredded chicken and pesto are all excellent options.
