The sardine sandwich is a Scandinavian classic, and is often served as a tasty lunch for special occasions. It's really easy to make, really filling, and looks really impressive!

It's time to get out the canned sardines you have sitting at the back of your pantry, and turn them into this showstopper of a sandwich. We got salty sardines, creamy hard boiled eggs, crunchy vegetables, and the optional kick of Dijon mustard. It can't get much better than that!

Ingredients
For this simple, but delicious sandwich you will of course need bread. The traditional version of the dish uses Scandinavian rye bread, but wholewheat bread will do as well.
You will also need canned sardines, hard boiled eggs, spinach or lettuce, cucumber, red onions, Greek yogurt, and optionally mustard.
Instructions
Spread Greek yogurt and optionally Dijon mustard over the slices of bread. Add some spinach leaves, cucumber slices, sliced hard boiled eggs (I use this egg slicer which makes slicing eggs SO much easier!), canned sardines, raw onions and a lemon slice on each slice.
After serving, squeeze the lemon over the fish and enjoy.

This sandwich can be served for breakfast, lunch or dinner. You don't have to serve anything else with it - unless you want to add some yogurt dill sauce on top - but you can, of course.
Sandwiches can be served with a side salad, or as a part of a lunch buffet table with other sandwiches, such as chicken tikka wraps or a caprese chicken sandwich.
Variations
Here are some fun ways to change up the dish:
- You can use mayonnaise instead of Greek yogurt if you prefer.
- Replace the sardines with mackerel or anchovies, or omit the fish for a vegetarian sandwich.
- Don't hesitate to add any other vegetables you like, such as sliced tomatoes.
- Try flavored sardines for a twist. I love chili marinated sardines!
Leftovers
This sandwich can be stored in a refrigerator for up to a day. If you have leftover ingredients, these can be refrigerated for a few days, and you can assemble the sandwiches when you're ready for future meals.
Frequently asked questions
Tomato based sauces, avocado, boiled eggs, pasta and peppers go well with sardines. In many recipes, you can use the fish in place of tuna.
Brisling sardines are only found in pure waters, like Norway. They are more nutrious than regular sardines, and some say they taste better.
You don't have to rinse the sardines, but I like to at least drain off the liquid from the can, as the fish can be quite oily.
If you buy canned sardines with skin and bones, you can remove these if you want, but it's completely fine to eat them.
