Why this is the best weeknight dinner recipe

- Using the instant pot means you don't have to keep watching the food, and there's no chance it will burn.
- It's suitable for most dietary requirements. The recipe is gluten free, dairy free, nut free, soy free, low calorie and whole30 compliant.
Ingredients
To make this recipe, you will need chicken breasts, potatoes, water or chicken broth, olive oil and some seasoning.
I like to use a combination of salt, pepper, thyme, oregano, parsley and onion powder, but you can find more seasoning suggestions below, or simply use what you like.
Instructions
- Cut the potatoes. I like to cut them into large chunks. Baby potatoes can be kept whole.
- Add chicken, potatoes, seasoning and oil to a mixing bowl, and stir to coat the chicken and potatoes evenly.
- Pour the chicken broth into your instant pot. Add the chicken to the broth, and place the potatoes on top of the chicken.
- Turn the valve to sealing, and turn on the PRESSURE COOK or MANUAL setting for 15 minutes.
- Leave the pressure to naturally release for 5 minutes before turning the valve to do a quick release of the remaining steam. Be careful, as the steam can be hot!
- Serve the instant pot potatoes and chicken immediately while they are still warm.
Top tips
- The natural release process is important, as the dish will continue to cook during this time. Don't skip it!
- I don't bother peeling my potatoes, but if you want to do this, I recommend peeling them after cooking.
- As chicken can taste quite plain when it's poached in the instant pot, it's important to season it generously.

Not quite sure what to serve with instant pot chicken and potatoes? Even though the dish is a meal in itself, I sometimes like to make other side dishes to enjoy it with. Serving up a variety of vegetable sides is a great way to make the meal more nutritious!

Variations
Lemon garlic: Add finely minced garlic and lemon juice for a classic chicken seasoning option.
Taco style: Replace the herbs with taco seasoning. It might sound strange for this dish, but taco flavored chicken tastes great!
Add vegetables: You can add extra veggies on top of the potatoes. Try green beans, broccoli, carrots or cauliflower for a wholesome dinner.
Sweet potatoes: If you prefer sweet potatoes over regular potatoes, you can easily swap them in this recipe. Make sure to half or quarter the sweet potatoes if they are particularly large.
Leftovers
Leftover chicken and potatoes store really well in a sealed container in a refrigerator for up to 2 days. I like to store mine in portion sized containers for quick and easy lunches and dinners.
Reheat the leftovers in the microwave for a few minutes, or place them in an oven safe casserole dish and reheat them in the oven for around 10 minutes or until they are warm.
Frequently asked questions
Absolutely! It's perfectly safe to cook chicken and potatoes together, as long as they are all well cooked.
In my experience, if you add any sauce to the instant pot, it tends to get very watered down. If you want to serve the dish with a sauce, I recommend adding the sauce on top after the chicken and potatoes are cooked.
