    Lebanese Salad Fattoush

    Fattoush is a Lebanese salad with fresh vegetables, a simple dressing and pita bread. A wonderful dish that can be enjoyed as a main or side dish for lunch or dinner.

    Fattoush is one of my most popular side salads in the summer, but this recipe is suitable all year around. It might seem simple, but the flavorful dressing and toasted pita bread makes one of my favorite healthy lunch options.

    This is a delicious vegan side salad with fresh vegetables. It's healthy, low calorie and lean, and really simple to make in only 15 minutes.

    💡 TIP! This recipe is perfect for using up any leftover pita bread from your pantry.

    Ingredients

    To make this recipe, you will need romaine lettuce, tomatoes, cucumber, scallions (also known as green onions and spring onions), radishes, parsley, pita bread, lime juice, pomegranate molasses, olive oil, salt, pepper and sumac.

    As with any salad, you can customize it to suit your preferences by omitting or adding any vegetables you like.

    Instructions

    1. Make the dressing by combing sumac, salt, pomegranate molasses, pepper and olive oil in a bowl.
    2. Slice the pita bread so that it's only a single layer, and cut into bite sized pieces.
    3. Coat the pita bread with half of the dressing.
    4. Bake pita bread pieces in the oven for 5 minutes at 400 F 200 C, or until crispy. Alternatively, toast the pita bread in an air fryer or in a pan. Any cooking method works, as long as the bread is toasted!
    5. Dice and slice the vegetables, and combine them in a bowl along with the remaining dressing. Add the toasted pita bread, and serve!

    Serving suggestions

    This flavorful Lebanese salad is best suited to serve as a main course or side dish for lunch or dinner. It's a simple dish with lots of flavor, and I think it works well paired with a variety of dishes. Here are some of my favorite recipes to serve it with:

    • Air Fryer Steak - Try steak and salad for a healthy and delicious dinner.

    Variations

    Try any of these wonderful variations of the salad:

    Protein: Make a filling Lebanese salad with chicken or chickpeas. Adding a protein source is great, particularly if you want to serve the salad as an entree.

    Oil free: You can omit the oil to make it oil free. I love an oil based salad dressing, but it's not technically necessary.

    Gluten free / low carb / keto: Omit the pita bread. Toasted pita bread is considered an essential part of a Fattoush salad, but it can certainly be omitted if your dietary requirements prevent it.

    Minty: Some recipes for Fattoush include fresh chopped mint. I love this as a refreshing version of the dish, particularly if you're serving it as a side dish for summer.

    Leftovers

    Any leftover fattoush salad can be stored in a sealed container in a refrigerator for up to 3 days. I recommend using fresh ingredients, as this will keep the salad nice for longer.

    The pita bread tends to soften while it's refrigerated. If you want to serve the leftover salad with crispy pieces of bread, you can store the bread separately, and reheat it in an air fryer or oven for a few minutes until crisp before adding it to the salad.

    If you want to prepare the salad a day ahead of time, I recommend storing the dressing, bread and vegetables separately, and assembling it right before serving.

    Frequently asked questions

    What is Fattoush dressing made of?

    Fattoush dressing is made of lemon juice or lime juice, olive oil, salt, pepper and sumac. Garlic can also optionally be added.

    What is sumac?

    Sumac is a spice made from the sumac flower. It's most commonly used in Middle Eastern cuisine.
