If you're looking for a simple but flavorful side salad, this olive salad is IT! Prepare it in only 10 minutes, and serve it with your favorite Mediterranean main.

Ingredients
Olives: Use your favorite olives. I love to use a combination of green olives and black olives, as the salad will look more colorful and beautiful. You can even use olives stuffed with peppers or garlic if you wish.
Feta cheese: An optional, but recommended ingredient which makes the dish more flavorsome and filling.
Red onion: Adds a little crunch and bite to the dish.
Fresh herbs: Use your favorite herbs. Dill, parsley, basil and mint are excellent options.
Tomatoes: Beautiful pops of color and flavor!
Instructions
Add olives, diced feta cheese, sliced red onion, halved cherry tomatoes and chopped herbs to a bowl. Stir to combine the ingredients.
You can adjust the amount of each ingredient, such as adding more herbs or tomatoes, until the salad is just how you like it. You can also add a vinaigrette or salad dressing if you prefer.
Serve it immediately, or store it in a refrigerator until it's ready to serve.
Top tips
Here is my best advice to make the perfect olive salad:
- I like to dice the feta cheese rather than crumble it. It simply looks a little more appetizing on the plate!
- Feel free to omit, add or substitute any ingredients as you please. Salads are very versatile and really easy to adapt to your preferences.
- You can add a salad dressing or vinaigrette if you want, although the salad tastes great without.

Variations
Vegan / dairy free: Omit the feta cheese for a vegan dish. If some of your guests eat cheese and others don't, you can serve the olive salad with the feta cheese on the side.
With other vegetables: Feel free to add your favorite veggies! Cucumbers, peppers, radishes and roasted carrots are all excellent alternatives.
With protein: Turn it into a main course salad by adding a protein. I recommend chickpeas or grilled chicken.
Leftovers
Leftover olive salad can be stored in a sealed container in a refrigerator for up to 3 days.
You can serve the leftover salad as a side dish with other meals, or you can add leftover shredded chicken, chickpeas or other proteins to turn it into a main course salad for lunch or dinner.
Frequently asked questions
Green olives are picked unripe, and black olives are ripe before they are harvested. They have a similar texture, but taste differently.
