Chocolate covered nuts have always been a favorite treat of mine, and I love making my own. There's something satisfying and almost meditative in separating each individual almond.
This recipe is incredibly simple, and you only need 2 ingredients. The nuts are amazing, and store really well for a few weeks.

Ingredients
This recipe only requires two ingredients: dark chocolate, and almonds. Ideally, you want to use high quality raw almonds. Avoid using salted almonds.
You can use your favorite brand of chocolate. I like to use this chocolate from Amazon, but any chocolate should work.
Instructions
Roughly chop or break up the dark chocolate and place it in a microwave safe bowl or container.
Microwave the dark chocolate for 30 seconds, then stir it with a fork. Repeat this with 30 second intervals, until the chocolate is completely melted.
Then, add the almonds to the chocolate. Stir to coat every almond completely in the melted dark chocolate.
Use a fork to separate each individual almond, and place them on a sheet pan or a piece of parchment paper. Try to drain off excess chocolate from each piece.
Leave the almonds to dry until the chocolate is completely solid. Depending on the type of chocolate you use, and the temperature in your room, this could take between 1-8 hours.
Move the chocolate almonds to a container for permanent storage, and enjoy!
Top tips
Here is my best advice to succeed with this recipe:
- The time it takes the almonds to dry can vary drastically. It could take as little as an hour, or you might want to leave them out overnight.
- Use high quality chocolate from a brand you love.
- Avoid using salted almonds. If you want a salted flavor, you're better off adding some sea salt flakes to the melted chocolate.
Serving suggestions
- Crush some dark chocolate almonds, and add them to cinnamon raisin granola.
- Use the almonds as a topping for peanut butter banana smoothie bowl, cinnamon raisin waffles, chocolate peanut butter oatmeal or other sweet dishes.
- Enjoy them as a snack alone, or with other healthy nut recipes, such as honey roasted almonds or roasted walnuts.
Variations
- Sprinkle some cocoa powder, cinnamon, chili flakes, sugar crystals or sea salt flakes over the almonds while the chocolate is still wet to add some extra flavor.
- Use milk chocolate or white chocolate if you prefer. You can also use a combination of different types of chocolate.
- Use other types of nuts, such as pecans, walnuts or cashews.
- Instead of coating the almonds completely in chocolate, try dipping only half of each nut. This will make them a little less chocolate-y.
Leftovers
Store the chocolate covered almonds in an airtight container for up to 2 weeks. I love to make a batch of these and add them as a treat to my lunch boxes, or to serve them to guests with a cup of coffee.
