    Mediterranean chickpea salad

    We love a good mixed salad, and this Mediterranean chickpea salad is commonly found at our dinner table. It's packed with colors and flavor, and goes so well with any Mediterranean dish. The chickpeas add a nice texture and some lovely protein, which makes this salad a good alternative for a light main dish. I love it paired with Easy slow cooker apricot chicken with thyme.

    How do you make a Mediterranean chickpea salad?

    This is the best part of salads - they are so easy to make! Chop all the veggies to the size and shape you prefer. Drain and rinse a tin of chickpeas, and dice some feta cheese. Combine everything in a salad bowl, and it's ready to serve! I also like to drizzle some lemon juice, salt and pepper, but this is completely optional. You could also substitute for your favorite vinaigrette or salad dressing.

    • Tomatoes
    • Cucumber
    • Olives
    • Feta cheese
    • Peppers
    • Lemon juice

    Is this salad good for you?

    With lean protein, lots of colorful veggies, some healthy fats and fiber, it's no surprise that this is a very healthy recipe. We are recommended to eat at least 5 portions of fruit and veg every day, and this salad will definitely help you along the way. Eating the whole salad bowl for yourself as a light meal will actually fill your entire daily recommendation!

    Tips and substitutions

    The vegetables - Omit any veggies you don't like. You can always add any other vegetables that you have at hand, or your family's favorites. That's the nature of salads - endless possibilities!

    The feta cheese - The dish is dairy free and vegan if you don't add any feta cheese. Alternatively, if you would like some cheese but don't enjoy feta, substitute it for some mozzarella or halloumi!

    The dressing - I add a drizzle of lemon juice, salt and pepper, and it tastes amazing. You can also add some olive oil or balsamic vinegar if you like, or any other dressing. I also think this would be great with some Greek yogurt or a yogurt based dressing.

    A healthy and easy Mediterranean chickpea salad that can be enjoyed on its own or as a side dish.

    Ingredients
      

    • 1 tin chickpeas
    • 100 g cucumber
    • 150 g tomatoes
    • handful kalamata olives
    • Β½ yellow pepper
    • lemon juice
    • 50 g feta cheese

    Instructions
     

    • Drain and rinse chickpeas thoroughly.
    • Cut or dice all the veggies to your preference.
    • Add some lemon juice, I used the juice of half a lemon.
    • Optionally, add some salt and pepper, some olive oil or a dressing

    Notes

    The salad tastes best when served immediately, but can be stored in an airtight container in the fridge for up to 3 days. It cannot be frozen. This recipe makes 4 servings as a side dish, or 2 servings as a light main.
