Greek pasta salad with feta and spinach

I love a good salad! This greek pasta salad with feta and spinach is so satisfying, and absolutely perfect for a midweek lunch. The recipe makes 3 portions, and I actually just split it in three containers to bring to work through the week. It keeps very well in the fridge for a few days.

My first ever memory of a greek salad is from the first time I went on holiday as a kid, to Crete in Greece. I remember browsing the menu thinking “what’s going to be a proper Greek meal for me to try out”, and natually I chose the one item that had Greek right there in the title. Greek salad. This was also my first meeting with feta cheese, which was served in a whole block on top of my salad. I have later found that I prefer feta cheese in smaller amounts, and I tweak the recipe slightly every time I make it. This time I’ve made it with pasta. The result is a filling, healthy salad that I’m happy to eat again and again.

Why spinach is great in a greek salad

Spinach and feta is a match made in heaven! Lettuce is good and all, but I tend to use spinach, kale and other colorful greens more often. The main reason is that greener leaves typically mean more nutrition, more vitamins and more fiber, all of which I want. But spinach is my go-to simply because it’s so tasty. Spinach and feta cheese is a particularly great combination. Their flavors compliment each other so well. That’s why I almost always use spinach for any salads that involve feta cheese. This greek pasta salad with feta and spinach is just an example of that.

If you haven’t tried eating spinach raw before, I highly suggest that you do, and this recipe is a great place to start as the dish is full of beautiful colors and flavors, but particularly because you get to experience one of my personal favorite flavor combinations – feta and spinach.

Greek pasta salad with feta and spinach

Delicious and easy salad that is perfect for lunch or a light dinner. Stored in an air tight container in the fridge it lasts for days, so this recipe is perfect for meal prep!

Ingredients

  • 100 g pasta
  • 1 red onion
  • 1 green bell pepper
  • black olives
  • spinach
  • 3 tomatoes
  • 1/2 large cucumber
  • 75 g feta cheese

Optional

  • 1/2 lemon (or lemon juice)

Instructions

  • Cook the pasta following package instructions
  • Cut all vegetables into bite sized pieces and combine in a large bowl
  • When the pasta is cooked, rinse it with cold water to cool it down completely, then add to the salad
  • Crumble feta cheese over and combine
  • Optional: Squeeze half a lemon or some lemon juice over the top and combine. This acts as a very refreshing dressing.

Notes

This recipe gives 3 large portions. You can choose how much spinach, feta and vegetables you want to add which could change the portion sizes.

Make it vegan

Take out the feta cheese to make it vegan. If you do, the salad can be quite boring as a main dish, so I suggest replacing the feta with either chickpeas or a vegan feta or mozzarella substitute. Alternatively keep it clean and serve with a creamy vegan dressing or vegan yogurt.

Greek salad as a side dish?

Greek salad is a great side dish! Make this recipe without the pasta, and serve with grilled meat.

Prefer a vinaigrette or dressing?

Of course feel free to use your favorite dressing, or a simple vinaigrette over this salad. Either in addition to or in place of the lemon.

Not a fan of lemon?

The lemon juice adds a lot of flavor so if excluded, I suggest replacing it with a dressing or vinaigrette.
