    Baked egg in avocado recipe

    This baked egg in avocado recipe has quickly become my obsession. It makes such a nice, filling breakfast - with healthy, satiating fat and protein instead of classic grains. Avocado and egg taste amazing together, and this recipe couldn't be easier. This dish has many names, and I'm not quite sure what to call it. Egg in avocado hole, egg in avocado bake, baked avocado with egg.. you guys get what I mean!

    How to bake an egg in avocado

    First, you will need a perfectly ripe avocado. Slice it in half, remove the stone, and use a spoon to scoope out a hole in the middle of the avocado. Crack an egg into the hole, then top with a drizzle of salt. Bake in the oven until the egg whites are solid. You can bake it extra if you want the yolk to be hard as well - I prefer mine with a runny yolk!

    Serve with a pinch of dried dill on top.

    What to serve with this

    This recipe is perfect for breakfast or lunch. You can serve it on its own, but I think it's perfect with a nice salad, or even some meatballs. I think this egg avocado bake is perfect as a part of a brunch table or buffet as well, and it's guaranteed to impress whoever you serve it to.

    Baked egg in avocado leftovers

    This dish is best when served warm, but if you have any leftovers, you can store them in the fridge for up to 2 days. Serve leftovers cold, or heat them up in the microwave when you are ready to eat them.

    Ingredients
      

    • 1 avocado
    • 2 eggs
    • pinch of salt
    • pinch of dried dill

    Instructions
     

    • Preheat the oven to 220°C / 210°C fan oven / 425°F.
    • Slice the avocado in half and remove the core. Place the halves on a baking tray.
    • Use a spoon to dig out a larger hole in the avocados. Crack one egg in each of the halves, drizzle a pinch of salt on each, then bake them in the oven until the egg whites have solidified. This takes about 15-20 minutes*, depending on the size of your eggs.
    • Remove the avocado eggs from the oven, and drizzle with a pinch of dill before serving them.

    Notes

    Your cooking time might vary depending on your oven and the size of your avocado and egg. Watch it carefully, especially if you want to keep a soft yolk. You just want the egg whites to barely set and turn white. If you prefer a hard yolk, you can bake the avocado for five minutes extra.
    You will have to use a ripe avocado for this recipe. It has to be soft enough to scoop out some of the middle parts of the avocado flesh.

        Yes! I usually scoop it right into my mouth, hate wasting food. Avocado toast is also a great solution!
