Popcorn is one of my favorite lean treats. It's so easy to make, it's low calorie, and you can vary the flavors endlessly. This version combines crispy popcorn with creamy peanut butter, and the result is an irresistible snack the whole family will love.
🥘 Ingredients
For this recipe you will need 2 ingredients: popcorn kernels and peanut butter. You will definitely want to use a peanut butter that's quite liquid-y rather than a thick variety, as you have to be able to drizzle it over the popcorn.
You will also need some butter or vegetable oil to cook the popcorn, as well as a large pot with a lid.
🔪 Instructions
First, add enough butter or vegetable oil to a large pot to cover the bottom with a thin layer. Heat the oil on high heat for a few minutes.
Add the popcorn kernels, shake the pot to distribute them evenly, then cover with a lid. Keep the lid on as the popcorn pops, but shake the pot occasionally.
Allow the popcorn to pop until the popping sounds slow down to a pop every 3-4 seconds. Then, remove the pot from the heat and leave the popcorn to rest for a few minutes.
Drizzle peanut butter over the popcorn, then stir to coat them evenly. Transfer to a bowl, and serve!
💭 Top tips
Here's my best tips for making perfect peanut butter popcorn:
- Use your favorite peanut butter. If the brand you like is too thick to drizzle, you can microwave it for a few seconds with some vegetable or peanut oil to dilute it slightly.
- Fancy salty popcorn? Add salt to taste after mixing in the peanut butter. This might not be necessary if the peanut butter already has salt added.
- Fancy sweet popcorn? Add a little caramel sauce along with the peanut butter.
🍲 Leftovers
Leftover popcorn with peanut butter can be stored in an airtight container for up to 3 days. The popcorn might soften and go stale over time, and is usually best when served fresh.
