Mushroom fried rice is a fantastic, easy dish you can make with leftover rice. Perfect to serve as a quick and easy side dish or main course.

Rice is such a great staple - but there is no need to keep making the same old plain, white rice. Check out my collection of rice recipes for more inspiration - or try Thai coconut rice, egg fried brown rice or spanakorizo.
Ingredients
The main ingredient in any fried rice is cooked rice. You can either cook rice right before making dish this, use store bought precooked rice, or use leftover cooked rice from yesterday's dinner.
Additionally you will need mushrooms. You can use your favorites here, such as button mushrooms, chestnut mushrooms, portobellos, shiitake or others. I typically use white button mushrooms.
Lastly, we add scallions (spring onions / green onions), sesame oil, green peas, rice vinegar, soy sauce and pepper. These are all added for texture and flavor, but can be omitted or substituted if necessary.
Instructions
Heat up the sesame oil in a large skillet or wok on high heat. Add sliced mushrooms, and stir fry these until they have cooked through and reduced in size.
Add the cooked rice, rice vinegar, frozen peas, soy sauce and pepper to the wok, and stir fry for a minuted until the rice has warmed through. Then, add some finely chopped scallions, stir them through, and serve.

Here are my best tips on how you can make the perfect mushroom fried rice:
- If you like your fried rice more crispy, you might have to add more oil, and make sure to leave the rice to simmer in the oil to crisp up nicely.
- If possible, avoid using overcooked rice. It tends to become mushy.
- Always make sure to sautee the vegetables before adding any rice. This ensures that they are fully cooked through.
Serving suggestions
So what do you serve with mushroom fried rice? This versatile dish can be used as a main or a side dish - it's completely up to you.
If the rice is served as a main course, I recommend serving it with some Chinese garlic green beans, air fryer broccoli or roasted vegetables.
However, if you want to enjoy this as a side dish, you can serve it with a variety of meals. Try it with a lovely basa fish curry, chicken tikka kebab, or air fryer whole chicken.
Variations
You can absolutely adjust the recipe to suit your personal preferences. Here are some of my favorite variations:
- Use brown rice for a more wholesome version of the dish.
- Serve it with your favorite sauce on top - like sriracha or sweet chili sauce.
- Use vegetable oil instead of sesame oil if you're allergic. Please note that you might want to add extra seasoning, as the sesame oil contains a lot of flavor.
- Add diced tofu or chicken for extra protein.
- Add other veggies as you wish - for example sliced carrots, broccoli, onions, sugar snap peas or cabbage.
Leftovers
You can store leftover fried rice for up to 4 days in airtight containers in a refrigerator. Reheat it in a skillet or microwave, and serve it as quick and easy future meals.
This makes mushroom fried rice perfect for meal prep! You can prepare a big batch, and enjoy it with multiple meals through the week, either as a main course for lunch, or as a side dish with several dinners.
