These delicious ground turkey enchiladas are lighter, but flavorful enchiladas, perfect for a tasty weeknight dinner.

These healthy enchiladas are made using ground turkey. Turkey is light meat, and contain much less fat than beef enchiladas, but is still full of flavor.
The key to succeed with these enchiladas is to use a great enchilada sauce. For simplicity, you can use a store bought sauce, but you can also make a delicious, homemade sauce if you prefer.
As they are quick and easy to make, these enchiladas are absolutely perfect as weeknight dinner. Only 10 minutes of work is required, followed by a few minutes of waiting while the dish bakes in the oven.
Ingredients
To make these easy ground turkey enchiladas, you will need ground turkey, onion, flour tortillas, cheese and enchilada sauce. I have used store bought enchilada sauce for simplicity, but you can also make your favorite homemade red enchilada sauce.
Additionally, you will need some seasoning. I use cumin, chili powder, and oregano. You can also add any other spices you like, or substitute these with your favorites.
Instructions
First, preheat your oven to 410 °F / 210 °C / 200 °C fan oven.
Finely dice the onion. Heat up the cooking oil in a skillet or frying pan on medium heat. Add the onion and ground turkey. Saute until the meat has browned and the onion soft, this usually takes about 5 minutes. You can read my guide on how to brown mince for more help!
Add ½ cup enchilada sauce to the ground turkey, along with the cumin, chili powder and oregano. Leave this to cook for 3-5 minutes.
Spread ¼ cup enchilada sauce across the bottom of a casserole or baking dish.
Next, you want to add the ground turkey mixture to the tortillas. Use 4 large flour tortillas, or 8 smaller tortillas. Add the filling in the middle of the tortilla, then roll it up. Place the tortillas in a single layer across the baking dish, with the fold down.
Pour the remaining enchilada sauce over the enchiladas, and spread it evenly. Sprinkle with shredded cheese. Bake the enchiladas in the oven for about 15 minutes, or until the cheese is melted and golden on the edges.
Serve the ground turkey enchiladas while they are still hot, with your favorite toppings or side dishes.

Here are my top tips to succeed with this recipe:
- Make sure to use a good enchilada sauce. You can use a store bought sauce to save some time, or use your favorite homemade recipe!
- You need to cook the filling thoroughly before adding it to the tortillas. The turkey has to be cooked through to make sure that the dish is safe to eat. Cooking the filling for a while also improves the flavor substantially.
- Although the recipe calls for ground turkey, you can replace this with any ground meat, like chicken, beef, pork, or even a vegetarian mince alternative.
Serving suggestions
Enchiladas are usually served as a main course either for lunch, or more typically, for dinner. They are often topped with typical Tex-Mex style toppings, such as salsa, avocado, sour cream, cilantro or lime wedges.
You can also serve the enchiladas with your favorite side dishes! Try serving it with chili lime rice, guacamole with lemon, or a salad.
Variations
You can practically vary enchiladas endlessly. Here are some of my favorite ways to vary turkey enchiladas:
Add beans: Black beans or kidney beans are perfect for enchiladas! Add some drained cooked beans with the filling. This is a great way to bulk out the meal with some vegetarian protein.
Add vegetables: You can add additional vegetables to the enchilada filling. Try adding diced peppers, roasted sweet potatoes or corn.
Leftovers
Leftover ground turkey enchiladas can be stored in airtight containers in a refrigerator for up to 3 days.
Reheat the leftover enchiladas in a microwave, air fryer or oven until they are hot throughout.
Since the enchiladas store really well, they are a perfect option for make ahead meals or meal prep. Make a batch of enchiladas, and store them in individual containers for quick lunches or dinners through the week.
