Chocolate covered pineapple is one of my favorite summer time treats. It's perfectly sweet and juicy, coated with a crispy chocolate.

Ingredients
This recipe only requires two ingredients: chocolate chips and pineapple.
Pineapple: Use fresh pineapple. You can slice or cut it however you want. I like to cut it into slices, but you can also cut smaller chunks or rings if you prefer.
Chocolate chips: Use your favorite. I use high quality milk chocolate chips, but dark chocolate or white chocolate also works well. I find that some chocolate chips tend to be a little thick when melted. If this is the case, you can add a little coconut oil to make the chocolate a little more spreadable.
Optional decor: Decorate the pineapple sticks by drizzling over some melted white chocolate, or sprinkle on some toppings like desiccated coconut, funfetti sprinkles or ground almonds. You can also stick a lollipop stick into the end of the pineapple, and serve them as pineapple lollipops.
Instructions
- Cut the pineapple: You can cut the pineapple however you like. I like to cut them into long sticks, but you can cut smaller chunks or rings if you prefer.
- Melt the chocolate: Add the chocolate chips to a microwavable bowl. Microwave for 30 seconds, then stir the mixture with a spoon. Repeat 1-3 times, or until the chocolate has melted completely. Some brands of chocolate can be rather thick. If this is the case, you can add a teaspoon or coconut oil to make the chocolate thinner and more suitable for dipping.
- Dip the fruit: Dip the pineapple pieces into the chocolate one by one. You can also use a spoon to get the chocolate on the fruit.
- Rest in the fridge: Lay the chocolate covered pineapple on a parchment paper covered baking sheet. Place the tray in a refrigerator, and leave it there for up to an hour to allow the chocolate to set before serving.
Top tips
- If your melted chocolate is a little thick, you can add some coconut oil to help it get thinner.
- Juicy pineapple can be a little slippery, and I sometimes find that the chocolate slides off. If this happens, you can spoon the chocolate onto the pineapple rather than dip the pieces.
- Add any toppings to the pineapple sticks while the chocolate is still wet. The toppings should then stick better.
- You can also cut different types of fruit and dip them all in the chocolate; pineapple, orange slices, strawberries and bananas all work really well together.
Serving suggestions
Serve chocolate dipped pineapple as a sweet treat or dessert. It's a very light dessert, perfectly suited for hot summer days.
You can also make some pineapple sticks for a picnic, a garden party, or afternoon tea during the summer months.
Leftovers
You can store the chocolate pineapple sticks in a refrigerator for up to 2 days. Avoid storing them at warm temperatures, or the chocolate could easily melt.
