Instructions
Pierce the sweet potato skins a few times with a fork, and coat them in a thin layer of olive oil. It's important to remember to pierce the potatoes, or they might explode in your air fryer and cause a big mess.
Place the sweet potatoes in your air fryer, and air fry at 390 °F / 200 °C for about 30-40 minutes, or until the potatoes are soft enough to pierce with a fork.
Remove the potatoes from the air fryer, and leave them to rest for a few minutes before serving.

- Depending on the size of the potatoes, they might cook faster or slower than suggested. Make sure to check that they are done before you remove them from the air fryer.
- Make sure not to overcrowd the air fryer basket, and don't stack potatoes on top of each other.
- You can use the same method to bake regular potatoes as well. You can even bake sweet potatoes and regular potatoes at the same time.

Air fryer sweet potatoes store really well. Keep them in an airtight container in a refrigerator for up to 5 days. You can serve the sweet potatoes cold, in salads or sandwiches, or warm them up to enjoy as a main or side dish.
You can also freeze baked sweet potatoes. I recommend scooping out the potato flesh, and freezing it for up to 6 months. You can use this to make mashed sweet potatoes, sweet potato pie or soups.
