These tasty treats are as good for breakfast as they are as an evening snack. Sauteed spinach and feta cheese is rolled in puff pastry to create lovely spinach and feta puff pastry pinwheels. We use ready made puff pastry to make this recipe as easy as possible.

How to make spinach and feta pinwheels
Pre-heat the oven to 200°C/400°F/Fan 180°C.
Add the spinach to a large pot on medium heat, and allow it to wilt down. It might seem like there's a lot of spinach, but when it's heated, it decreases in size by quite a lot. Keep stirring the leaves to prevent them from burning on the bottom.
When it's properly wilted down, remove it from the pot and transfer to a mixing bowl. Add powdered onion and garlic, along with crumbled feta cheese. Use a spoon to combine all the ingredients.
Roll the puff pastry to a sheet of approximately 20 x 30 cm. You will need a rolling pin, unless you're using ready rolled puff pastry. Then, spread the feta and spinach mixture on top. Starting from the shortest side of the rectangle, roll the puff pastry into a log. Use a sharp knife to cut it into 12 equally sized pinwheels, and place them on a baking tray or silicone baking sheet.
Sprinkle some parmesan on top of each pinwheel, and add them to the oven. Bake for 15-30 minutes, or until the puff pastry is golden and flaky.
Tips and tricks for perfect pinwheels
- Use a sharp knife to cut the pinwheels. This way you get a good shape, and you can easily make them all equally sized.
- I use a non-stick baking tray to make sure the pinwheels don't stick to the tray. If you don't have one, you can use silicone baking sheets.
- Roll the puff pastry out on a floured surface or a baking sheet to make it easier to roll together. If using ready rolled puff pastry, this usually has a baking sheet already attached.
Ways to serve these puff pastry bites
I love to serve spinach and feta pinwheels as a savoury treat, or for breakfast or lunch. These would also be great for a buffet or potluck, and they are perfect for a picnic. You could make them ahead for easy lunches through the week, or you can serve them as a side with a nice soup.
Storing leftovers
Leftover bites can be stored in an airtight container in the fridge for up to 4 days, or it can be frozen for up to 3 months. You can enjoy the leftover rolls cold, or you can reheat them in the microwave. Puff pastry tends to taste best the day of cooking, so I highly recommend making them right before serving.
If you want to make it ahead, I suggest rolling the puff pastry with the filling inside, then wrapping it and storing it in the fridge until you're ready to bake it. Then, slice the roll into pinwheels, and bake on a baking tray as described.

You could definitely use frozen spinach! I would recommend thawing it, then draining and pressing out as much water as possible before adding it to the cheese.
