    This amazing healthy pesto vinaigrette is the only salad dressing you'll ever need. It goes perfect with everyday salads or Mediterranean flavors, and can even be drizzled on meat for a little something extra.

    I have salad for lunch almost every day, and having a good dressing honestly makes all the difference. Pesto vinaigrette is great because of how versatile it is, how well it keeps, and how amazing it tastes!

    🥘 Ingredients

    To make the best pesto salad dressing, you only need 3 ingredients: a yummy pesto, apple cider vinegar and a good olive oil. That's it!

    🔪 Instructions

    Add the pesto, apple cider vinegar and olive oil to a small bowl or container. Shake or stir together until combined.

    If you wish the pesto to be even thinner, you can add some extra olive oil until you have reached your desired consistency.

    Pesto vinaigrette is a lovely salad dressing, and can be served with any of your favorite salads. These are my top choices:

    • Smoked salmon and quinoa salad
    • Italian salad with mozzarella and salami
    • Chicken and mango salad
    • Greek pasta salad
    • Chicken and pesto salad

    You can also drizzle it over any main or side dish to add a hint of Mediterranean flavor. Try it with sea bass, on pork chops, or lemon chicken.

    💭 Top tips for the best result

    • Use a good quality extra virgin olive oil for this recipe. The oil gives the vinaigrette a lot of flavor, and a low quality oil like vegetable oil will simply not taste as nice.
    • If you don't have apple cider vinegar, you can use white wine vinegar or even lemon juice instead.

    🍲 Storing leftovers

    Store leftover pesto salad dressing in an airtight container in the fridge for up to 14 days.

    You might notice that the olive oil and pesto separate in the storage container. This is completely normal, and can be solved by giving it a little shake before use.

    💡 TIP! Eat a lot of salads? Make a large portion of dressing to go with your salads for the week. To prevent them from getting wet and soggy, keep the dressing in a separate small container. Add it to the salad right before serving it. Yum!
