Pesto vinaigrette salad dressing

This amazing healthy pesto vinaigrette is the only salad dressing you need. It goes perfect with everyday salads or Mediterranean flavors, and can even be drizzled on meat for a little something extra.

Ingredients

  • 2 tablespoon Pesto
  • 4 tablespoon Extra virgin olive oil
  • 2 teaspoon Apple cider vinegar

Instructions

  • Add the pesto, apple cider vinegar and olive oil to a small bowl or container. Shake or stir together until combined.
  • If you wish the pesto to be even thinner, you can add some extra olive oil until you have reached your desired consistency.

Which pesto do you use? – You can buy your favorite pesto for this recipe, or make your own. I love this recipe for a healthier pesto.
Is this recipe allergy friendly? – Pesto vinaigrette is typically gluten free, soy free, nut free, dairy free and vegan. Always check the label of the ingredients you use to ensure that they are suitable for your dietary requirements. Certains brands of pesto contains nuts or dairy.
 

STORING LEFTOVERS

Store leftover pesto salad dressing in an airtight container in the fridge for up to 14 days.
You might notice that the olive oil and pesto separate in the storage container. This is completely normal, and can be solved by giving it a little shake before use.
💡 TIP! Eat a lot of salads? Make a large portion of dressing to go with your salads for the week. To prevent them from getting wet and soggy, keep the dressing in a separate small container. Add it to the salad right before serving it. Yum!

TOP TIPS FOR THE BEST RESULT

  • Use a good quality extra virgin olive oil for this recipe. The oil gives the vinaigrette a lot of flavor, and a low quality oil like vegetable oil will simply not taste as nice.
  • If you don’t have apple cider vinegar, you can use white wine vinegar or even lemon juice instead.
