Hummus makes for an excellent pasta sauce. It's thick and creamy, and full of flavor. You can make your own hummus (like my favorite roasted red pepper hummus), or just use a store bought variety to save time.
I love how simple yet flavorful this dish is, and I love that it all comes together in only 10 minutes. Perfect for busy days when you just want to put food on the table with as little hassle as possible.
This dish is also nut free, soy free, dairy free, vegan and vegetarian. It can also easily be made gluten free by using gluten free ingredients.

Ingredients
To make this recipe you will of course need pasta. I use spaghetti, but you can use any type of pasta that you like, such as penne, tagliatelle or fusilli.
You will also need hummus, spinach, garlic, olive oil, red pepper flakes, and salt and pepper to season.
Instructions
Boil pasta according to the package instructions in a pot.
Meanwhile, in a smaller pot or skillet, heat up the olive oil on medium to high heat. Add finely diced or grated garlic, and sauté for about 30 seconds, then add raw spinach.
Sauté the spinach for about a minute, or until it has wilted down completely. Then, add hummus, and stir to combine the ingredients. Leave the hummus sauce to gently simmer on medium to low heat for a few minutes, or until the pasta is done.
Drain off the excess pasta water, then add the hummus sauce to the pasta. Stir to coat completely.
Serve the hummus pasta immediately while it's still warm either alone, or paired with your favorite side dish.

Leftovers
In my experience, pasta tends to absorb any liquid over time. You can store leftover hummus pasta in a sealed container in a refrigerator for up to 4 days, however keep in mind that the hummus will dry out.
I therefore like to keep the pasta and hummus sauce separate, and store any leftovers separately. You can then combine the spaghetti with the sauce, and reheat them in a microwave for future meals.

Instructions
- Cook the spaghetti in a pot following package instructions. Reserve ½ cup of the pasta cooking water, and drain the cooked pasta.
- Heat up the olive oil in a smaller pot. Add grated or finely chopped garlic and red pepper flakes, and saute for about 30 seconds or until fragrant.
- Add the spinach to the garlic, and sauté until the leaves have wilted. Then, add the hummus and pasta water and stir to form a sauce.
- Then, add the cooked spaghetti to the hummus sauce, and stir to coat evenly.
- Season with salt and pepper to taste, and top with basil if you prefer, then serve.
