This easy hamburger soup combines hamburger meat and vegetables in a hearty tomato broth. It's a hearty and filling meal, and absolutely perfect for using up leftovers.

I always plan at least one "use whatever I have in the fridge" meal a week. It's a great way to prevent food waste, and you can use a combination of raw, frozen, canned and cooked veggies.
🥘 Ingredients
The best hamburger soup is really easy to make. You will need ground beef, canned diced tomatoes, beef stock (or vegetable stock), and a wide range of vegetables.
In this recipe we use garlic, onions, celery, potatoes, carrots, peas and green beans, however you can add or omit any vegetables as you please.
This truly is a great recipe for using whichever veggies you have left in your freezer or at the back of the fridge. Anything goes! Add beans, zucchini, aubergine, squash, sweet potatoes, cauliflower, broccoli, corn, fennel or any other vegetables you have available.
🔪 Instructions
First, finely chop onion and garlic. Dice potatoes, carrots and celery in bite sized pieces.
Heat the oil in a large pot on medium heat. Add the chopped onion and garlic, and sautee for a few minutes until the onion has softened and is translucent.
Add the ground beef to the pot, and cook until it has browned completely.
Then, add the diced tomatoes, beef stock, potatoes, carrots and celery. Cover with a lid, and leave the soup to simmer until the potatoes have cooked through, typically about 20 minutes.
When the vegetables have softened, add frozen peas and green beans. Leave to cook for 2-3 minutes, or until these have warmed through.
Season to taste with salt and pepper, and serve.
