Hamburger Soup

This easy hamburger soup is made with ground beef or hamburger meat and vegetables in a tomato based broth. It’s a hearty and filling meal, and absolutely perfect for using up leftovers.

Ingredients

  • 500 g ground beef (hamburger meat)
  • 500 g potatoes
  • 300 g carrots
  • 1 l beef stock
  • 2 celery sticks
  • 1 can (400 g/14 oz) diced tomatoes
  • 150 g frozen green peas
  • 100 g frozen green beans
  • 1 onion
  • 2 garlic cloves
  • 1 teaspoon vegetable oil

Instructions

  • Finely chop onion and garlic. Dice potatoes, carrots and celery in bite sized pieces.
  • Heat the oil in a large pot on medium heat. Add the chopped onion and garlic, and sautee for a few minutes until the onion has softened and is translucent.
  • Add the ground beef to the pot, and cook until it has browned completely.
  • Then, add the diced tomatoes, beef stock, potatoes, carrots and celery. Cover with a lid, and leave the soup to simmer until the potatoes have cooked through, typically about 20 minutes.
  • When the vegetables have softened, add frozen peas and green beans. Leave to cook for 2-3 minutes, or until these have warmed through.
  • Season to taste with salt and pepper, and serve.

Notes

What is hamburger meat? – It’s the meat hamburgers are made with! It’s essentially ground beef, but often has a higher fat content. If you can’t find it in your local store, you can replace it with ground beef instead.
Is this recipe allergy friendly? – Yes! Since this recipe contains meat and vegetables, it should be free of most allergens. Remember to check the nutrition labels of the ingredients you use.
Is hamburger soup OK for my diet? – This recipe should be suitable for most diets, including slimming world, weight watchers, whole 30 and paleo. You can also make it keto friendly by using low carb vegetables such as asparagus, broccoli, spinach, peppers and green beans.

  • You can use the vegetables listed, or replace with your own. Hamburger soup is a great recipe for using whichever ingredients you have at hand, so feel free to experiment.
  • The seasoning is kept to a minimum, as the beef stock and veggies give the soup plenty of flavor. If you want to change it up, you can add some Italian seasoning.
