Banana churro slices is an excellent way to use up any leftover ripe bananas you might have. This sweet treat makes for a great dessert, and it's easy to make both a single serving and a larger batch.

    🥘 Ingredients

To make these banana churros, you will need bananas, coconut sugar (or regular sugar) and cinnamon.

You will also need either coconut oil or butter to cook the banana slices.

Want soft, mushy bananas? - Use very ripe bananas, or cook them for longer.

Want more solid banana churro pieces? - Use less ripe bananas, and be careful not to cook them for too long.

    🔪 Instructions

Slice the bananas. Combine the coconut sugar and cinnamon in a small bowl.

Melt the coconut oil in a frying pan on medium heat. Add the banana slices.

Sprinkle half the cinnamon sugar over the bananas. Leave it to cook for about 30 seconds, then flip the banana slices over and sprinkle with the other half of the cinnamon and sugar.

Allow a few minutes for the sugar to start dissolving, then remove it from the heat and serve!

    🥗 Serving suggestions

The slices can be enjoyed as a sweet treat, or added as a topping on oatmeal, crepes, pancakes or ice cream.

I also think these would be amazing to add in banana bread!

    🍲 Leftovers

If you have any leftovers (doubt it!), you can store them in the fridge for up to 2 days. Serve them cold, or reheat them if you prefer warm cinnamon banana slices.

    📋 Frequently asked questions

Why is there so much liquid in the banana churros? - The liquid will be water and sugar that's released from the bananas as well as the added sugar. Riper bananas will give more sugary liquid. This sweet liquid can be discarded, or used.

Can I use vegetable oil or olive oil? - No, avoid these. They will give the bananas an oily flavor. Unsalted butter and coconut oil are the best options here.

Why coconut sugar? - I tend to use coconut sugar as it has a lot of health benefits compared to regular granulated sugar, but for this recipe you can use whichever you prefer.
