Ingredients
Chicken: I like to use chicken breasts in the recipe, however you can use any cut of boneless chicken, like chicken thighs if you prefer.
Water + tomato paste (UK: tomato puree): Makes the base of the curry sauce.
Ginger + onion + garlic: Add flavor to the curry.
Seasoning: Makes the dish taste like a curry! We use cumin, coriander, garam masala, paprika, cinnamon, chili powder and cloves, but you can omit or substitute these as you like.

One: Sauté diced onion, garlic and ginger.
Two: Add seasoning and tomato paste to the pot, and sauté for another minute.
Three: Add water and diced chicken. Stir to combine, and leave the curry to simmer for about 15 minutes, or until the chicken has cooked through.
Top tips
- Make sure to sauté the seasoning and aromatics thoroughly, as this will bring out a lot more flavor from the curry.
- Substitute the seasoning with your favorites. Don't be afraid to customize the flavors in this dish.
- The chicken will cook in 10-20 minutes, depending on the size of the chunks. Keep an eye on it to prevent the meat from overcooking.
- Puree the onion, garlic and ginger in a food processor or blender if you prefer a smooth curry sauce.

Chicken Rogan Josh
Ingredients
- 1 pound chicken breasts
- 1 onion
- 5 cloves garlic
- 2 cup water
- 5 tablespoons tomato puree
- 2 tablespoon olive oil
- 1 tablespoon grated ginger
- 2 teaspoon cumin
- 2 teaspoon coriander
- 2 teaspoon garam masala
- 2 teaspoon paprika
- 1 teaspoon cinnamon
- ½ teaspoon cloves
- ½ teaspoon chili powder
Instructions
- Finely dice the onion, garlic and ginger. Dice chicken against the grain into bite sized chunks.
- Heat up the olive oil in medium to high heat in a skillet or pot. Add diced onion, ginger and garlic, and sauté for a few minutes, or until the onion is soft and translucent.
- Add tomato paste and seasoning to the pot. Sauté for another minute to allow the flavors to develop.
- Then, add the diced chicken and water. Stir to combine the ingredients, and reduce the temperature to medium.
- Optionally cover the pot with a lid, and leave the curry to simmer for 10-20 minutes, or until the chicken has cooked through. The exact cooking time will vary depending on the size of the chicken chunks.
