Spicy chicken noodle soup is a tasty twist on a popular classic. Made with chicken thighs, egg noodles and a spicy, flavorful broth, it's a filling and comforting soup, perfect to soothe your body and mind.

Chicken noodle soup is America's favorite soup for a reason. It's so easy, comforting, and mild that it's impossible not to like. In this recipe we have simply added some chili and other flavors to make a spicier broth, which suits the dish preally well.

🥘 Ingredients
For this recipe you will need sliced carrots (fresh or frozen), water + chicken stock cubes, or chicken broth, chicken thigh fillets or chicken breast fillets, noodles, miso paste, ginger paste, garlic cloves and chili.
I like to use egg noodles, but you can also use spaghetti, fusilli or udon noodles.
🔪 Instructions
Finely mince the garlic, and slice the chili. Heat up the olive oil in a pot on medium to high heat. Add the garlic and chili, and sauce for a minute. Then, add the ginger paste, miso paste and carrots. Saute for another minute while stirring.
Add the water + chicken stock cubes, or chicken broth, to the pot, along with the chicken fillets. Cover with a lid, and leave the soup to cook for about 20 minutes, or until the chicken has cooked through.
Use two forks to shred the chicken. Add the noodles to the pot, and leave the soup to cook for 3-5 more minutes, or until the noodles are tender.
Add salt and pepper to taste, and serve the soup immediately while it's still hot.

- Avoid cooking the soup for too long, or you risk mushy veg and dry chicken.
- Always ensure that the chicken has cooked through before you remove it from the heat. If in doubt, you can sure a meat thermometer. Chicken is cooked when it has reached an internal temperature of 165 °F / 74 °C.

Spicy chicken noodle soup is a main course best served as lunch or dinner. You can serve it as is, or with some crusty bread if you prefer.
You can also add other ingredients as toppings to the soup. Toppings are prepared ingredients that you simply add to your bowl of soup before you eat it. If you are cooking for a large crowd, you can serve the dish with a variety of toppings, allowing everyone to top their own soup with the items they like.
Some excellent topping options for this chicken soup with noodles include air fryer roasted radishes, nuts, sauteed spinach with garlic, sliced chili, fresh herbs, and lemon or lime wedges.

Soups have endless possibilities! Here are some of my favorite ways to change this recipe up:
Add more vegetables: Any veg will do! Try adding diced peppers, zucchini, mushrooms, celery or broccoli for a more hearty chicken noodle soup.
Quick option - rotisserie chicken: You can make this soup really fast by using rotisserie chicken, or leftover roast chicken. Follow the instructions as listed, but add the cooked chicken towards the end of the cooking time. Homemade chicken noodle soup in 10 minutes!
Vegetarian version: If you're cooking for vegetarians, you can replace the chicken with chickpeas, mushrooms or marinated tofu.
🍲 Leftovers
Leftover spicy chicken noodle soup can be stored in a refrigerator for up to 2 days. Keep in mind that the noodles will keep absorbing the liquid while it's stored, so you might want to add more liquid when you reheat the leftovers.
This soup is also excellent for freezing! Freeze the soup for up to 6 months, and thaw it in a refrigerator overnight before reheating and serving it.
I love to make a big batch of chicken noodle soup, and freeze it down in portion sizes. It's excellent to have on hand for those winter nights where you just crave a comforting warm bowl of soup but you don't feel like cooking.
