Healthy slow cooker buffalo chicken tacos are delicious soft tacos filled with pulled buffalo chicken and coleclaw veggies, topped with creamy ranch dressing. These easy tacos are healthy comfort food at its best.

  • 8 tortilla wraps
  • ½ cup ranch dressing
  • 2 cups mixed coleslaw veggies (shredded cabbage and carrots)
  • 4 chicken breasts
  • ½ cup buffalo sauce

Instructions

  • First, prepare the pulled chicken. You can use your favorite method for making shredded chicken.
  • I make mine in the slow cooker: add the chicken breasts with the buffalo sauce in the Crockpot, cook it on high for 3-4 hours, or on low for 4-6 hours.
  • Then, remove the chicken from the slow cooker. Use two forks to shred the meat into pieces, and add more buffalo sauce if you want.
  • Finely slice or grate red cabbage and carrots, or use a pack of pre-prepared coleslaw vegetables.
  • Assemble the tacos by adding coleslaw vegetables, shredded buffalo chicken and ranch dressing. Optionally, top it with extra buffalo sauce for the ultimate buffalo experience!

Notes

💡 TIP! Need a quick buffalo chicken? Use shredded rotisserie chicken, and cover it with buffalo sauce.
Are buffalo chicken tacos vegan? – These tacos include chicken, and are therefore not suitable for vegans or vegetarians.
Is this recipe allergy friendly? – This recipe is nut free and soy free. If you are allergic to gluten, dairy or eggs you will have to make sure that the ranch dressing and tortillas you use fit your dietary requirements.
Can you make this without buffalo sauce? – Of course. You can make this recipe with plain shredded chicken, or replace the buffalo sauce with sriracha, sweet chili sauce or bbq sauce for alternative versions.
Can you make this without coleslaw veggies? – Absolutely! Replace the cabbage and carrots with any other vegetables, like lettuce, tomatoes or spinach.
Can I omit the ranch dressing? – Yes. Omit it completely, or replace it with a different sauce or dressing that you like.
💡 TIP! Make a large portion of slow cooker pulled buffalo chicken, and freeze down any leftovers. Then you can make quick buffalo chicken tacos whenever you feel like it!
 

🐓 BUFFALO CHICKEN

These tacos include pulled buffalo chicken. You can make them in the slow cooker, or buy them precooked. Buffalo chicken is chicken covered with buffalo sauce, which is a buttery hot sauce. The most popular brand is Frank’s RedHot, and I prefer to use the original version.
 

🌮 TACOS

These bufflo chicken tacos can be served with soft tortilla wraps, or in hard taco shells. Pick your favorite!
You can fill tacos with whatever toppings you like. I use a healthy ranch dressing and finely chopped red cabbage and carrots (coleslaw veggies!), but you can replace these with other toppings. Here are some suggestions:
  • Add a tex mex style black bean and corn salad
  • Fresh veggies like tomatoes, avocado, red onions, corn or lettuce
  • Sauces like guacamole, tomato salsa or cilantro lime dressing
 

💭 TOP TIPS

  • Turn this into a taco bowl or buffalo chicken taco salad by serving the chicken with veggies and grains in place of the tortilla wraps.
 

🥗 SERVING SUGGESTIONS

Tacos are often served as is, on their own. If you want, you can also include extra toppings in the tacos.
If you wish to serve them with a side dish, I recommend chili lime rice, or a green salad.

🍲 LEFTOVERS

Leftover buffalo chicken tacos can be stored in the fridge for up to 2 days. I find that each ingredient keep longer if they are stored separately.
I suggest to keep the tortillas, chicken, ranch and veggies stored separately, and assemble them when you are ready to eat. This way, they will last longer without affecting the texture or flavor.
