Equipment

Ingredients

  • 1 gammon joint
  • 500 ml stock (½ cups)

Instructions

  • Prepare the gammon. If your gammon joint has a pork rind, remove this and other external fat.
  • Add the gammon to your slow cooker (remove the packaging!).
  • Add some liquid to your slow cooker. Use vegetable or ham stock, water, or try any of the flavor variations. You want to add at least 1-2 cups / 500 ml of liquid.
  • Cook the gammon on low for 8-10 hours, or on high for 4-6 hours.
  • When the gammon is cooked, remove it from the slow cooker and use two forks to shred the gammon to pieces.

Notes

Gammon joints come in different sizes. Estimate about 100 g gammon per serving. This recipe works perfectly for any size and shape gammon joint. Just make sure your slow cooker is large enough to fit the gammon joint comfortably, along with some liquid.

💡 TIP! Pork is safe to eat when it reaches an internal temperature of 62°C / 145°F. To avoid food poisoning, it is always recommended to use a meat thermometer to make sure that the meat is cooked through.

📖 FLAVOR VARIATIONS

Gammon is delicious, but it can be made even more interesting by adding some flavors. Here are some of my favorites:
  • BBQ sauce, teriyaki, sweet and sour, sweet chili or mushroom sauce  Add this to the gammon after it is cooked and shredded.
  • Soda or juice like ginger ale, coke, fanta, pineapple juice, apple juice etc. – Use this in place of water. The drinks will remove some of the salt from the gammon, and will leave the pork more easy to eat. Don’t worry, it won’t actually taste like soda.

🍲 STORING AND USING LEFTOVERS

Gammon can be frozen for up to 3 months. Thaw and reheat before serving. You can also store pulled gammon in an airtight container in the fridge for up to 3 days. Add to soups, stews, casseroles or salads for quick and filling meals.

🥗 SERVING SUGGESTIONS

Gammon is typically served as a classic roast dinner with roasted potatoeshoney roasted parsnips, gravy, and other cooked vegetables.
You can also be a bit more creative, and use pulled gammon in kale soup or fried rice.

🐖 GAMMON VS HAM

Ham and gammon are cuts from the same part of a pig, the hind leg. In the UK we use the word gammon to describe cured, uncooked ham. The flavor is very salty, and you can buy gammon joints smoked or unsmoked. If you don't have gammon available, you can use a ham joint instead.

💭 TIPS FOR MAKING PULLED GAMMON

Remove the fat. Many gammon joints are sold with the fat removed. I always remove pork fat when using the slow cooker. When slow cooking fat, it turns into a jelly like texture, and becomes inedible. Cut off the fat before cooking the gammon to avoid this problem altogether. By removing the fat, gammon is also low on calories, and syn free on the popular slimming world diet.

📋 FREQUENTLY ASKED QUESTIONS

How do I make gammon less salty? – To remove some of the saltiness, you can soak the gammon joint in water before cooking it. I like to remove it from the packaging the night before, then store it in a container with water overnight before cooking it. I can barely taste the salt!
Is gammon good for you? – Gammon is heavily processed meat, but can definitely be enjoyed occasionally.
