Halloumi Stir Fry

Halloumi stir fry with Mediterranean vegetables is a tasty, lean meal perfect for a quick and easy lunch or dinner. The soft cheese pairs really well with the crunchy vegetables, making this an untraditional but lovely Greek style stir fry.

Ingredients

  • 400 g halloumi
  • 200 g broccolini
  • 100 g cherry tomatoes
  • 1 medium zucchini
  • 1 bell pepper
  • 20 olives

Instructions

  • Dice and slice all the ingredients in bite sized pieces. Heat some cooking spray or vegetable oil in a frying pan or wok, then add the halloumi and veggies.
  • Stir the ingredients as they fry until they have warmed through and reached the consistency you prefer, 4-7 minutes.

Top tips

Here’s my best tips on how to make the BEST stir fry with halloumi:
  • Don’t try to substitute halloumi with any other cheese. It won’t really work in this recipe.
  • If you’re using very hard vegetables such as cauliflower or carrots, you might want to stir fry these for a while before adding the other ingredients.
  • If you use soft vegetables such as tomatoes, you might want to add these towards the end of the frying time as they cook extra fast.
  • You can use a stir fry sauce if you want, but I think this recipe tastes really fresh and flavorful without it. Try adding some balsamic vinegar or sweet chili sauce if you want.
  • Stir fries are meant to be cooked on a high heat while you stir the ingredients. If you cook it on low heat, the vegetables will be more steamed than seared.
