Caprese Pasta Salad with Pesto

This caprese pasta salad with pesto is a comforting, easy vegetarian pasta salad. Combine pesto, mozzarella balls and tomatoes with pasta for a healthy light dinner or lunch.

Ingredients

  • 300 g pasta
  • 200 g cherry tomatoes
  • 200 g mozzarella
  • 3 tablespoon pesto

Instructions

  • Boil the pasta according to the package instructions.
  • Drain off the remaining pasta water, and add the pasta to a salad bowl. Add pesto, and stir to coat each piece of pasta evenly in the sauce.
  • Chop the cherry tomatoes in half, and add them to the salad along with small mozzarella balls.
  • Combine the salad, and serve!
