Lebanese Salad Fattoush
Fattoush is a refreshing, healthy Lebanese salad with beautiful colors and flavors. Perfect to serve as a light main, or as a delicious side dish.

- 1 English cucumber
- 5 Roma tomatoes
- 4 scallions (green spring onions)
- 1 head of Romaine lettuce
- 2 pitabreads
- 10 radishes
- 1 lime juice only
Dressing
- 1 teaspoon sumac
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- 2 tablespoons olive oil
- 1 teaspoon pomegranate molasses
Make the dressing by combing sumac, salt, pomegranate molasses, pepper and olive oil in a bowl.
Slice the pita bread so that it's only a single layer, and cut into bite sized pieces.
Coat the pita bread with half of the dressing.
Bake pita bread pieces in the oven for 5 minutes at 400 F 200 C, or until crispy. Alternatively, toast the pita bread in an air fryer or in a pan. Any cooking method works, as long as the bread is toasted!
Dice and slice the vegetables, and combine them in a bowl along with the remaining dressing. Add the toasted pita bread, and serve!
- Store leftover salad for up to 3 days in a sealed container in a refrigerator. Store the bread separately if possible to keep it fresh for longer.
- Feel free to add or omit any ingredients as you please!
