Lebanese Salad Fattoush

Fattoush is a refreshing, healthy Lebanese salad with beautiful colors and flavors. Perfect to serve as a light main, or as a delicious side dish.

Ingredients

  • 1 English cucumber
  • 5 Roma tomatoes
  • 4 scallions (green spring onions)
  • 1 head of Romaine lettuce
  • 2 pitabreads
  • 10 radishes
  • 1 lime juice only

Dressing

  • 1 teaspoon sumac
  • teaspoon salt
  • teaspoon pepper
  • 2 tablespoons olive oil
  • 1 teaspoon pomegranate molasses

Instructions

  • Make the dressing by combing sumac, salt, pomegranate molasses, pepper and olive oil in a bowl.
  • Slice the pita bread so that it's only a single layer, and cut into bite sized pieces.
  • Coat the pita bread with half of the dressing.
  • Bake pita bread pieces in the oven for 5 minutes at 400 F 200 C, or until crispy. Alternatively, toast the pita bread in an air fryer or in a pan. Any cooking method works, as long as the bread is toasted!
  • Dice and slice the vegetables, and combine them in a bowl along with the remaining dressing. Add the toasted pita bread, and serve!

Notes

  • Store leftover salad for up to 3 days in a sealed container in a refrigerator. Store the bread separately if possible to keep it fresh for longer.
  • Feel free to add or omit any ingredients as you please!
